Spicy Parmesan Green Beans

We go up to Pittsburgh to my parents house frequently in the summer.  The combination of my mother and I both being off from work because we’re teachers and the crazy number of birthdays make for a lot of summer visits.  We have 4 family birthdays in June and 4 more in July.  Every time we go my mother gives us fresh produce from her garden.

One thing she always has a ton of are green beans.  I don’t know how she has so many but I feel like we’re always taking pounds of them home.  Not that I mind because I like fresh green beans.  They are easy to prepare and there are several ways I’ve made them that we enjoy.

Most recently I wanted to make Parmesan green beans but I didn’t feel like boiling them first then tossing them in the sauce so I set off to see if I could just make it all in a pan.  Turns out I could!  This was a “throw it together as I go” recipe but it turned out great and both my husband and I really enjoyed it.  The beans are a little salty, a little spicy from the seasoning, and have a lot of great cheese flavor.

Spicy Parmesan Green Beans  (a Hezzi-D original)
1 lb. fresh green beans, trimmed
2 T. butter
2 t. sea salt
1 t. black pepper
3 garlic cloves
2 t. blackened Cajun seasoning
3 T. fresh grated Parmesan cheese

1.  Heat the butter in a medium skillet over medium heat.  Once the butter has melted add the green beans.

2.  Saute the green beans for 5-6 minutes or until they are bright green.  Add in the salt, pepper, garlic cloves, and Cajun seasoning and cook for an additional 3-4 minutes or until the green beans are tender.

3.  Remove from heat and add the Parmesan.  Toss to coat.  Serve hot.
