Shamrock Pretzels

    Every now and then I like to make a dessert that I can have my students help me with.  It generally has to be something that is low mess, easily prepared, and fun to do.  These shamrock pretzels were fun to make and the kids were able to help by unwrapping the Hershey's kisses, sorting out the M & M's, and putting the M & M's on the Hershey's kisses.

    I made sure to put the first M & M on each Hershey's kiss just so I could get it pressed down how I wanted it and then the students put the other two on top.  I then piped on some green frosting for the shamrock stems then we popped them in the refrigerator to cool because the kids couldn't wait to eat them.  They were super cute and the kids had a lot of fun making them!

Shamrock Pretzels  (from Once Upon a Dream)
24 small pretzel twists
24 Hershey's Kisses
72 green M & M's  (I used mint ones and had to use a few white ones as well)
1/4 c. green frosting

1.  Preheat the oven to 200 degrees.

2.  Place the pretzels on a cookie sheet.  Put a Hershey's Kiss on top of each one.  Bake for 7 minutes.

3.  Remove from the oven and immediately place 3 M & M's in the center of the pretzel to form a shamrock.  Let cool for 15 minutes.

4.  Pipe green shamrock stems on each of the pretzels and then place in the refrigerator for 10 minutes to set.  

**Store in an air tight container for up to 2 weeks*

Black Midnight Cake

    This week our recipe challenge, hosted by Taste of Home Cooking,  was a dessert challenge.  Everyone knows how much I love a good dessert so I couldn't wait to get my recipe.  I received a recipe from the blog So Tasty, So Yummy which I've made many recipes from.  I knew this was going to be a good one.

     I received a recipe for Black Midnight Cake.  I was worried about making an entire cake because I didn't want to end up eating it all myself.  Luckily I was having a party for my students for St. Patrick's Day so I figured I could put some green frosting on it and serve it to the kids.

     When I went to frost the cake I realized I didn't make enough frosting.  I started to panic and then realized I could try something new.  I've never left the sides of a cake unfrosted before but I've seen cakes like this.  I gave it a try and I thought it turned out gorgeous!  The deep brown of the cake showed beautifully with the light green frosting.  It was better looking then I thought it would be.

     Then since I was trying a new technique I thought why not try another one?  I cut a shamrock out a a piece of parchment paper and they lay the outline of it on my cake.  I shook green sprinkles over top of the outline then carefully peeled out the paper.  It left a bright green sprinkle shamrock on my cake.  The kids loved how it looked.  I gave some of the leftover cake to the teachers in my school and at least 2 of them told me it was the best chocolate cake they've ever had!

Black Midnight Cake (adapted from So Tasty, So Yummy)
For the cake:
10 T. butter
1 c. sugar 
1/2 c. brown sugar
3 eggs
1/2 c. Hershey's cocoa powder
1 1/3 c. cold water
2 c. flour
1/2 t. baking powder
1 t. baking soda
1/2 t. salt
1 t. vanilla

For the frosting:
12 T. butter
3 c. powdered sugar
1 t. vanilla
1-2 T. milk
green food coloring

Green sprinkles for decorating

1.  Preheat the oven to 350 degrees.

2.  In a large bowl cream together the butter and sugars until fluffy.  Then beat in the eggs.

3.  In a medium bowl mix the cocoa powder and cold water together.

4.  Pour the cocoa mixture into the sugar mixture and beat until well combined.

5.  In another medium bowl combine the flour, baking powder, baking soda, and salt.  Pour into the bowl with the chocolate batter and mix well.  Stir in the vanilla.

6.  Line the bottom of two 9 inch cake pans with parchment paper.  Grease the sides.  Pour half of the chocolate cake batter into each pan.  Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

7.  Remove the cakes from the oven and cool for 5 minutes on a wire rack.  Run a knife around the edges and then remove the cakes from the pans.  Cool completely on the wire rack.

8.  Meanwhile, using a mixer beat the butter until it is fluffy.  Add the powdered sugar a half cup at a time until 2 cups have been added.  Add in the milk and vanilla and mix on low for 1 minute.  Add in the remaining powdered sugar and beat on medium speed until desired consistency is reached.  Stir in green food coloring.

9.  Place one of the cakes on a cake round.  Spread 1 cup of the green frosting on top of the cake.  Place the second cake layer on top of the frosting.  Spread the remaining frosting on top of the cake.  Leave the sides unfrosted so you can see the filling in between the cake layers.  Top with sprinkles if desired.

Celebrate Pi Day with Marie Callender's

   Do you know what March 14th is?  It's Pi Day!   Pi Day is an annual celebration to commemorate the mathematical constant π .  The reason it's celebrated on March 14th is that the most significant digits in Pi are 3.14 which corresponds with March 14th.

   As an elementary school teacher I often celebrate Pi Day by doing some fun activities with my students.   One thing I always like to do is bring in a pie and put the π symbol on it in frosting.  The kids get a big kick out of seeing a different way of writing pie.  Most years I would make my own pie but because I've been extra busy this year I decided to buy a Marie Callender's pie because they taste just like homemade.  I bought the Dutch Apple Pie which is made with real apples.  Good thing I got to take a photo before my students dug into this pie because it was gone in minutes!

    Another fun activity I like to do with the students is make a Pi bracelet.  We take 10 different colored beads and assign each one a numeric value.  1=red, 2=orange, 3=yellow, 4=green, and so on.  Then the students will begin by placing a yellow bead, then a red bead, then a green bead, and so on following the infinite number of Pi until the bracelet fits around their wrist.  This is always a fun activity and the students like to compare how many beads they used in comparison with the number. 

    We also like to create our own pies.  Each student receives a sheet of paper with a circle drawn on it.  They get to draw inside the pie and then color it in to show what kind of pie they would like to create.  Then they have to write 2-3 sentences describing their pie.  In the end we glue the π symbol in the middle of the pies and hang them up.

Rainbow Jell-O Cups

     Throughout the years I've seen a lot of rainbow Jell-O and I've even eat some rainbow Jell-O.  I never really thought about what the white stripes in between the colored Jell-O was until I decided to make it.  When I saw that it was simply sweetened condensed milk and gelatin I was really surprised.  I guess I shouldn't have been since sweetened condensed milk is used in so many recipes.

     If you want to make this recipe you need to be aware of two things.  It's a very easy process but it's quite time consuming.  You need 15-20 minutes in between each layer and since I had 4 flavors of Jell-O I had seven layers total counting the white layers.  It ended up taking me over 2 hours to complete the entire process.  I will say they are super cute and my students absolutely loved them when I took them to school for a snack.  I used sugar free Jell-O to keep the calories down.

     I ended up using red, orange, green, and blue but you can use as many colors as you'd like.  I took these in as for St. Patrick's day because of the rainbow connection but I think they'd be great for birthday parties or summer BBQ's as well.

Rainbow Jell-O Cups (from Taste of Home Cooking) 
4 packages (3 oz. each)  flavored Jell-O (I used lime, Berry Blue, strawberry, and peach)
6 envelopes Knox unflavored gelatin, divided 
5-3/4 c. boiling water, divided 
1 can (14 oz) sweetened condensed milk 
1/4 c. cold water
12 plastic cups (at least 4 inches tall)

1.  In a small bowl combine the Berry Blue Jell-o and one envelope of Knox gelatin.  Stir in 1 cup of boiling water and stir until dissolved.  Divide evenly into the 12 cups.  Refrigerate for 15 minutes or until set but not firm.

2.  In a small bowl combine the sweetened condensed milk and 1 cup of boiling water.  In a second small bowl place the cold water.  Sprinkle 2 packages of Knox gelatin over the cold water and let stand for 1 minute.  Then stir in 3/4 cup of boiling water.   Add this to the milk mixture.  Pour 1 cup of the milk and gelatin mixture into a liquid measuring cup ad pour evenly over top of the Berry Blue Jell-O cups.  Refrigerate for 15 minutes or until set.

3.  Repeat sets 1 and 2 again using the lime Jell-O and the peach Jell-O.  Make the final layer with the strawberry Jell-O and refrigerate for at least 2 hours before serving.  

**Note:  These Jell-O cups can be made up to 3 days ahead of time.

St. Patrick's Day Dessert Round Up!



    St. Patrick's Day is just around the corner!   I've been thinking about what desserts I can make for this holiday.  There are so many different options.  I could go with a green or mint theme to highlight the color scheme of this holiday.  Or I could go with a rainbow theme to embrace the pot of gold at the end of the rainbow.  I could also do boozy desserts that use Bailey's, Irish Whiskey, or Guinness.   I'm not sure which theme I'm going with yet but here are some ideas to get you thinking about desserts for March 17th!

Oddities & Entities by Roland Allnach

     Oddities & Entities is a surreal, provocative anthology of six tales within the supernatural/paranormal/horror genres, exploring a definition of life beyond the fragile vessel of the human body.  The stories are:  'Boneview', in which a young woman struggles to balance her ability to see through people with the presence of a supernatural creature in her life; 'Shift/Change', in which a hospital worker struggles to regain his memory as he is confronted by a series of desperate people; 'My Other Me', in which a lonely college student finds himself displaced from his body by his alter ego, 'Gray', in which a frustrated man is stunned to discover a little creature has been living in his head; 'Elmer Phelps', in which a brother and sister find themselves linked in a strange reality by a bat bite in their youth; and lastly, 'Appendage', in which a cynical mercenary is hired by his son to protect a research lab on the verge of a stunning discovery.  (synopsis from the author)


    This collection of short stories are sure to set you on edge.  They are mysterious and creepy all wrapped up into one.  While each story is takes place independently from the rest, they each have similar aspects that allow them to co-exist in the same collection of stories.  I found that each of the stories has a twist to them that managed to keep me interested to the end.

    I did find that some of the stories left unanswered questions.  While it left me thinking about the story I'm not a fan of excess information in a story that leaves me wondering.

    The stories are all well written and the characters were realistic.  The setting of each was also believable and went well with the theme.  One of my favorite short stories was 'My Other Me' because I liked the idea of an alter ego living inside a human mind and being completely different from the body it's in.  The other story I enjoyed most was 'Boneview' because there were several stories related to Allison's view of humans.  She was able to see when someone was about to die and it is somehow tied in to a spirit she sees on the nights of the full moon.  It was both creepy and kept me on the edge of my seat.

    This is a collection for anyone who enjoys paranormal and horror stories.  The stories can be read out of order and can be picked up and read in a short period of time.

I give this book 3 out of 5 stars.

Chocolate Chip Cookie Bars with Pretzel Crust: Secret Recipe Club

    It's time for another Secret Recipe Club swap!  This month the blog I received was Peanut Butter and Peppers.  I was excited to get Jennifer's blog because I already follow it and have several of her recipes pinned to make.  When I found out this was my blog I knew immediately I wanted to make the Chocolate Chip Cookie Bars with Pretzel Crust.  I've been eye balling these bad boys for a while!

    I didn't have to wait too long.  A few days after receiving my blog a few friends of ours decided to come over and play some games.  I'm always making sweets when people come over because when I make them for just Frank and I we end up eating most of them.

     These cookies were awesome!  A sweet and salty pretzel crust topped off with chocolate chip cookies is the perfect combination of sweet and salty.  I love the extra crunch the pretzel crust gives the bars as well.  They are super easy to make because they are bar cookies and they were great for company!

Chocolate Chip Cookie Bars with Pretzel Crust  (adapted from Peanut Butter and Peppers)
For the crust:
1 3/4 c. pretzels, crushed into tiny pieces
1/3 c. butter, melted
3 T. sugar

For the Cookies:
6 T. butter, softened
1/4 c. sugar
1/4 c. light brown sugar
1 egg
1 t. vanilla
2/3 c. King Arthur all purpose flour
1/2 c. Bob's Red Mill graham flour
1/2 t. baking soda
1/2 t. salt
1 c. mini chocolate chips

1.  Preheat the oven to 350 degrees.  Spray an 8 x 8 pan with cooking spray or line it with parchment paper.

2.  In a medium bowl combine the ingredients for the crust.  Spread into the prepared pan and bake for 8 minutes.

3.  Meanwhile, beat the but and sugars until well combined.  Add in the egg and vanilla and mix well.

4.  In a small bowl combine the flours, baking soda, and salt.  Add the flour mixture to the butter mixture and mix well.

5.  Stir in the chocolate chips.

6.  Drop spoonfuls of the cookie dough on top of the hot pretzel crust and gently spread it over top of the pretzels.  Use your fingers and press the dough into the pretzels.

7.  Bake for 20-22 minutes or until a toothpick inserted into the center comes out clean.  Cool on a wire rack.

8.  Cut into 16 or 20 bars and serve cooled.

     I was excited to receive this ebook for review because I am someone who is always making homemade gifts for holidays and birthdays.  I like to give homemade gifts because they are meaningful, you can personalize them, and they are cost effective.  The author writes this book with the idea of making homemade stress relieving gifts.  This is a great idea especially around the holidays when everyone is stressed.

     There are many great ideas in this book from making scented lotions and scented oil to homemade preserves and teas.  There are some great recipes for these gifts and ideas on how to make them.  In addition to making the actual product, the author talks about ways to make creative packaging for them as well.

     This is a short ebook but it's very informative and has great ideas.   The only thing missing from this book were pictures.  There wasn't a single photo in the book.  As someone who likes to look at a picture before making anything, I found some of these ideas hard to visualize.  My rating of the book definitely would have been higher had there been pictures to go along with the projects.

I give this book 3 out of 5 stars. 

Linguine with Cauliflower Pesto #WeekdaySupper

     Pesto is one of those things that I really like but it is something that Frank will not eat.  He doesn't like basil so it's something I don't make at home.  When I received Smitten Kitchen's cookbook for Christmas I noticed a pesto recipe that was made with parsley, almonds, cheese, and cauliflower.  I thought this would be a great compromise that both of us with eat.

Sunday Supper Movement     The sauce was comparable to pesto but with a slightly different texture.  I liked the flavors from the pepper flakes, pecorino romano cheese, and the texture of the nuts and cauliflower.  It was flavorful but not too heavy.  Frank even enjoyed it and thought it was a great alternative to traditional pesto.
     As you probably know, I am party of #SundaySupper which is all about sharing supper with your family on Sundays.  The idea is that Sunday Supper starts as one day a week and soon becomes a way of life!  Since it's Monday, I wanted to share this delicious meatless recipe for #weekdaysupper. 

Linguine with Cauliflower Pesto (slightly adapted from Smitten Kitchen Cookbook)
1 small head cauliflower, cut into florets
2 garlic cloves
1/4 t. red pepper flakes
1/3 c. pecans (or almonds or pine nuts)
2 oz. Pecorino Romano cheese
6 sun-dried tomatoes, dry variety
1 T. capers, drained
1/4 c. fresh parsley
3 T. olive oil
1 t. sherry vinegar
1 t. salt
1 t. fresh ground black pepper
1 lb. linguine

1.  In a large pot heat salted water to a boil.  Cook the linguine according to the package directions.  Drain, reserving 3/4 cup of pasta water.

2.   Meanwhile, pulse the cauliflower in a food processor until it is the size of couscous.  Pour the cauliflower into a large bowl. 

3.  Add the garlic, pepper flakes, pecans, cheese, sun-dried tomatoes, capers, and parsley to the food processor and process until the mixture resembles coarse breadcrumbs.  Scrape the mixture into the bowl with the cauliflower and mix well.

4.  Add the oil, vinegar, salt, and pepper to the cauliflower mixture and stir until well combined. 

5.  In a large skillet combine the cooked linguine, reserved pasta water, and cauliflower pesto.   Toss to combine and heat for 2-3 minutes.  

6.  Serve with fresh grated Parmesan or Pecorino Romano cheese.

Memories of Murder by Lara Nance

     Maeve is a strong woman who is recovering from a scary attack.  After spending some time in Savannah with her family she moves to a small town and takes a job as the nurse practitioner in a retirement community.  She thinks that a new job in a new place will help her start over...and keep her from using her witch powers that she vows to keep bound.

     But soon after Maeve moves to town one of the residents at the retirement community jumps to his death.  The murder investigation brings handsome sheriff Paul into Maeve's life but it also brings up memories of her attack.  Soon she is struggling between falling for the sheriff, keeping her witch powers bound, and helping with the investigation.

     This book was well written and easy to follow.  Maeve is a strong main character who has some internal and external struggles that cause her to make some tough decisions.  The budding relationship between Maeve and Paul was fun to imagine because while they liked each other, they did hit a few rocky patches as all new couples do.

     The Gems, Maeve's mother and her aunts, are also witches.  They bring fun to the story and really fill in the gaps.  They may be the life of the party but they love Maeve and use their powers to help her solve the mysteries that surround the retirement community.

     While parts of the ending were predictable, there were one or two twists that I definitely didn't see coming.  I enjoyed reading this book and finished it in a couple of days.  It was an easy and fun read.

I give this book 4 out of 5 stars.

Steamy Kitchen Healthy Asian Favorites Cookbook

     There are so many things I love about this cookbook.  Most of the recipes are easy to make and they are all healthy!  We love making Asian food so this book was perfect for my family.  The first recipe I made were these incredible Thai Larb Chicken Lettuce Cups.

     Before choosing my recipe for this weeks #SundaySupper I had never heard of Thai Larb Chicken before.  Then I was watching TV the very day I chose the recipe and Bobby Flay was having home cooks make Thai Larb cups!  It was a fun coincidence and I was happy to see how the home cooks made their lettuce cups.

     This recipe is great because it was prepped and cooked in under 30 minutes.  The flavors were wonderful together.  The chiles add a good bit of spice while the lime juice adds a bit of acid and the fish sauce gives it a great flavor.  They lettuce cups were a perfect dinner served with steamed rice.

Thai Larb Chicken Lettuce Cups (Reprinted with permission from Steamy Kitchen’s Healthy Asian Favorites by Jaden Hair, copyright © 2013. Published by Ten Speed Press, a division of Random House, Inc.)
1 1/2 tablespoons cooking oil
1/2 pound ground chicken breast
2 shallots, diced
1/4 red onion, diced
1 clove garlic, very finely minced
Minced fresh chiles, Jalapeno or Fresno (amount up to you)
1 tablespoon fish sauce
1/2 lime, juiced
1 teaspoon low-sodium soy sauce
1 head icebery lettuce, leaves separated into "cups"
1 handful of cilantro and/or mint, cut into chiffonade



Heat a wok or large saute pan over high heat.  When hot, swirl in 1 tablespoon of the oil and add the chicken.  Use your spatula to break up the meat and spread out over the surface of the pan.  Cook until browned, about 3 minutes.

Push the ground chicken to one side of the pan and swirl in the remaining 1/2 tablespoon of oil.  To the oil, add the shallots, red onion, garlic, and fresh chiles and saute the aromatics until fragrant, about 30 seconds.  Add the fish sauce, lime juice, and soy sauce.

Serve with lettuce cups and herbs.

Note:  I added additional soy sauce and used Jalapeno peppers
