Chocolate Chip Cranberry Muffins

This is the ultimate cookbook for Chocolate Chip lovers.   There are 125 recipes included in the cookbook, all of which include chocolate chips.  The book begins with tools and equipment needed for perfect desserts. It then goes to common dessert ingredients.

After the introduction the cookbook breaks up into different categories.  There are beverages, breakfast, cakes, cookies, frozen desserts, muffins, pies, puddings, and sweet endings.

Many of the recipes are easy to make with ingredients found in most kitchens.  There are beautiful color photos of some of the recipes.   They all look mouthwatering.

After looking through the book, I wrote down a few of my favorites to try.  These include Chocolate Chip Hotcakes, Chocolate Port Torte, Brown Sugar Shortbread, Peppermint Chip Gelato, Ginger Muffins, and Quick Cinnamon Chocolate Pastries.  I will be making all of these at some point.   They sound awesome.

Muffins made with sweet chocolate chips and tart cranberries

There was one more recipe I wanted to try and it was the first recipe I tried from this book.   Chocolate Chip Cranberry Muffins  were the recipe I tried.   I chose this one because I almost always have cranberries and chocolate chips in the house.   Plus my husband really liked cranberries.

The muffins were made using a basic and traditional recipe.  Then cranberries and chocolate chips are folded into the mixture along with orange zest.  They baked up nice and fluffy.   The chocolate melted in the muffins which was awesome.

The actual muffin was sturdy and had a great crumb to it.   The chocolate was sweet and the cranberries tart.   It made the muffins taste like chocolate covered cranberries.   While these would be good for breakfast or a snack, they are sweet enough to serve for dessert as well.

Chocolate Chip Cranberry Muffins

Yield: 12 muffins
Prep Time: 10 minutes
Cook Time: 24 minutes
Total Time: 34 minutes

Fluffy vanilla muffins studded with cranberries and chocolate chips for a delectable sweet and tart muffin.

Ingredients

  • 2 c. all purpose flour
  • 2 t. baking powder
  • 1 teaspoon salt
  • 1 1/2 c. fresh or frozen cranberries
  • 1 1/4 c. sugar, divided
  • 2 eggs
  • 3/4 c. milk
  • 1/2 c. vegetable oil
  • 1 teaspoon grated orange zest
  • 1 teaspoon vanilla
  • 1/2 c. semisweet chocolate chips

Instructions

  1. Preheat oven to 375 degrees.
  2. Line a muffin tin with paper liners.
  3. In a medium bow, combine flour, baking powder and salt.
  4. In a food processor fitted with a metal blade, coarsely chop cranberries.
  5. In a large bowl, whisk together 1 cup of the sugar, eggs, milk, oil, orange zest and vanilla. Stir in flour mixture, just until combined. Fold in chopped cranberries and chocolate chips. DO not overmix.
  6. Spoon batter into prepared muffin cups. Sprinkle evenly with remaining sugar.
  7. Bake in preheated oven for 20 to 24 minutes or until puffed, golden and a tester inserted into center comes out clean. Let cool in pan on rack for 5 minutes. Remove from pan and let cool completely on rack.
