Sundays are busy days in our house.   I always start the morning off by looking at the sales in the paper, matching up my coupons, and writing my grocery list.   I shop for the entire week which includes 5-6 dinners, 5 lunches, and food for the football games.

Last Sunday I headed over to Kroger because they had some of my favorite products on sale.  I loaded my cart up with everything I needed for dinner this week, plus the ingredients for my Pepper Crusted Ribeye Sliders with Cheddar Beer Sauce.  This is one of my favorite Game Day appetizers and it’s always a big hit.

It takes just a few easy steps to make these Ribeye Sliders with Beer Cheese Sauce

To get started on my Game Day Sliders I rubbed the ribeyes with a pepper rub and then put them in a skillet to sear them.  Then I finished them off in the oven.   While the steaks were in the oven I got started on my cheese sauce.   This is seriously the best cheddar beer sauce I’ve ever made.  It’s made with cheddar cheese, butter, and Warsteiner Premium German Pilsener or any other pilsner.  It smooth, slightly thick, and sticks to the sandwiches.   It makes a lot of cheese so if you don’t use it all it’s great for dipping pretzels in!

After the ribeye rests on a cutting board for 5 minutes I like to slice it thin. Then I line up my Pepperidge Farm® Bakery Classics Sweet & Soft Slider Buns on a serving tray or a baking sheet. I love that these buns are created by bakers and are always baked to perfection. After opening up the buns I start assembling them. There’s the ribeye followed by the cheddar beer sauce, bacon, and jalapenos on top. I like to eat mine at room temperature but I usually put some of them in the oven for 5-10 minutes and serve them warm.

These sliders are amazing!  The pepper crusted ribeye and jalapenos are spicy and pair perfectly with the sweet slider buns. The bacon adds saltiness and crispiness to the sandwiches. Pepper Crusted Ribeye Sliders with Cheddar Beer Sauce

Yield: 12 sliders
Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes

These sliders are stuffed with pepper crusted ribeye, crispy bacon, cheddar beer sauce, and pickled jalapenos for the ultimate Game Day snack.

Ingredients

For the Ribeyes:

  • 2 (12 oz) boneless Ribeye steaks
  • 1 Tablespoon olive oil
  • 1 Tablespoon fresh cracked black pepper
  • 1 teaspoon sea salt
  • 1 teaspoon garlic powder

For the Cheddar Beer Sauce:

  • 1 Tablespoon butter
  • 2 Tablespoons flour
  • 1/2 c. milk
  • 1 teaspoon dry mustard
  • 1/4 teaspoon nutmeg
  • 4 oz Warsteiner Premium German Pilsener (or any other pilsner)
  • 1 1/2 c. cheddar cheese, shredded

To assemble the sliders:

  • 12 Pepperidge Farm Bakery Classics Sweet & Soft Slider Buns
  • 6 strips bacon, cooked and cut in half
  • 24 pickled jalapenos

Instructions

  1. Preheat the oven to 375 degrees.
  2. Rub the olive oil on the Ribeye steaks. Combine the pepper, salt, and garlic powder in a small bowl then rub all over both side of the steaks.
  3. Heat a large skillet over medium high heat. Place the ribeyes in the skillet and cook for 3 minutes on each side or until the steaks are seared on both sides.
  4. Transfer the steaks to an 8 x 8 baking dish and bake for 10 minutes or until the internal temperature reads 135 degrees. Remove from oven and allow to rest for 5 minutes then slice thin.
  5. Meanwhile, melt the butter in a medium sized saucepan over medium heat. Once the butter is melted whisk in the flour and continue to cook for 1-2 minutes.
  6. Add the milk, a tablespoon at a time, while whisking constantly. Continue adding until all of the milk is incorporated. Whisk in the mustard and nutmeg.
  7. Slowly pour in the beer while whisking over medium heat.
  8. Add in the cheese a handful at a time, whisking after each addition, until all of the cheese is added and the sauce is smooth. Remove from heat.
  9. To assemble the sliders place the buns on a tray or baking sheet. Open the buns and place 3 slices of ribeye, 1 tablespoon of cheese sauce, 2 half strips of bacon, and 3 jalapenos on the buns.
  10. Serve at room temperature or heat at 375 for 5-10 minutes to serve warm.
