Every week we have a pizza night.  It’s my favorite night of the week because it’s quick, easy, and everyone eats it!

Most weeks we simply have pizza with cheese, pepperoni, and maybe some peppers.  Every once in a while we mix it up and will have chicken, sausage, or a vegetable pizza.

My husband, son, and I all love pizza but sometimes regular pizza with red sauce gets boring.  I’ve been seeing some very creative pizzas lately and finally got to try one of them.

I chose to make a Greek pita pizza.  I loved the idea that the pizza is made from pitas and the sauce is a spoonful of hummus.  Those are two of my favorite things.

Ingredients:

  • olive oil
  • pitas
  • red wine vinegar
  • salt
  • pepper
  • oregano
  • garlic clove
  • red onion
  • olives
  • sun dried tomatoes
  • hummus
  • mozzarella cheese
  • feta cheese
  • Greek yogurt
  • cucumber
  • lemon juice

To make the Tzatziki:  Combine the Greek yogurt, cucumber, garlic, vinegar, lemon juice, salt, pepper, and oregano in a bowl.  Mix well and refrigerate until ready to serve.

To make the Topping:  Combine the red onions, sun dried tomatoes, olives, vinegar, olive oil, oregano, and garlic.

To make the pitas:  Spray the pitas with cooking spray.  Bake at 450 degrees for 5 minutes.  Flip and spread hummus on the pita, then sprinkle with mozzarella cheese.  Top it with the vegetable topping and feta.  Bake for an additional 5-7 minutes.

While you can really choose whatever toppings you’d like we like sun dried tomatoes, olives, and red onions.  Plus you don’t just throw the vegetable toppings on the pizza, you marinate them in vinegar and herbs before putting them on.

There’s also feta and mozzarella cheeses on top.  The pizzas take just 10 minutes in the oven and then they are finished.  Once out of the oven they are topped with plenty of homemade made Tzatziki sauce.

What can I use instead of hummus?

If you don’t like hummus you can pick a different Mediterranean sauce for your pizza. Some good options would be whipped feta, Tzatziki sauce, or Baba Ganoush.  You could use traditional sauce but then your pizza won’t have the same vibe.

What is Tzatziki sauce?

Tzatziki is a yogurt dip or sauce found in the Middle East.  Usually it uses Greek yogurt that is strained but you can use regular yogurt as well.  It’s usually made with cucumbers, garlic, lemon juice, and herbs. The herbs can be any combination of parsley, mint, dill, thyme, or oregano.   I usually use parsley and oregano but use whatever it is you like.

What else can I use the Tzatziki sauce for?

I always have a lot of leftover Tzatziki and usually I just serve it with fresh pita.  It’s fresh and delicious.   Another good use of the sauce is over top of grilled meat like lamb, beef, or chicken.  Tzatziki can be used as a burger topping as well along with feta cheese.

Use this sauce on wraps or sandwiches in place of mayo.  Another great use is as a low calorie salad dressing.  The last use would be on top of a baked potato instead of sour cream.

Can I use different size pita bread?

You can use any size pita bread you’d like.  I use the regular sized pitas but this recipe will make 8 mini pitas.  You can also use whole wheat pitas in place of the regular pita bread.  No pocket pita bread is great for this too!

Two bowls. One with white Tzatziki sauce and one with onions, olives, and tomatoes in it.

These pizzas were awesome!  The pita crust gets so crispy and the toppings are drizzled with vinegar, olive oil, and oregano.  It’s definitely a different pizza but it’s so good.

We usually take the pizzas out and cut them into quarters with a pizza cutter.  Then you can either drizzle the Tzatziki on top or use it as a dipping sauce.

Since my son doesn’t eat all of these toppings he just gets a pita with sauce and cheese which doesn’t take any extra time to make!  Everyone can make theirs the way they want it which makes dinner time a success.
