Homemade Tortilla Chips

A few of our friends called one day to tell us they were in town and they wanted to get together for happy hour.  Instead of going out we invited them to come to our house for drinks and snacks.  I immediately set to work preparing appetizers and snacks when I realized I was completely out of tortilla chips.  I didn’t have time to run to the store but when I looked in the refrigerator I noticed a large pack of corn tortillas.  I figured I could use them to make my own tortilla chips.

These were simple to make.  I cut the tortillas into chip size pieces, drizzled them with olive oil, and then sprinkled them with salt.  After a few minutes in the oven they were golden brown and I pulled them out.  Once cooled they were crisp and delicious.  I did end up burning one batch as it doesn’t take long for them to go from having no color to burning.

Homemade Tortilla Chips (original Hezzi-D recipe)
8 corn tortillas
1 T. olive oil
1 t. salt

1.  Preheat the oven to 375 degrees.

2.  Stack 4 corn tortillas on top of each other.  Using a pizza cutter, cut the tortillas into 8 pieces.

3.  Place the chips on a cookie sheet and drizzle with the olive oil.  Sprinkle with salt.

4.  Bake for 6-8 minutes, watching carefully so that the chips do not get overly brown.  Remove from oven and cool on a plate.  The chips will crisp up as they cool.
