Triple Chocolate Cake with Kit Kat’s

I love making cakes.  I just love choosing a flavor, filling, and frosting and then coming up with fun ideas for decorating them.  I usually make birthday cakes for the adults in my family but I’ve never really made them for my young cousins.  They always get store bought cakes with fun themes.

That all changed this year.  I was talking to my godson a few weeks before his birthday.  I asked him what he wanted for his birthday.  His response was an iPad or a chocolate cake.  I told him I couldn’t afford the iPad so he told me he wanted me to make a chocolate cake with chocolate icing.  I’ve never made his cake before and was curious as to why he wanted me to bake one but I just focused on decorating the cake.

His favorite candy in the world is a Kit Kat and I have seen many cakes surrounded by Kit Kat’s and knew he’d love it.  So I made the chocolate cake with chocolate frosting that was lined with Kit Kat’s.  He absolutely loved it and thought the Kit Kat’s were awesome.  He started picking them off before anyone even had a bite of cake!  This is definitely a cake for chocolate lovers.

Triple Chocolate Cake with Kit Kat’s (Cake adapted from Dorie Greenspan’s Baking From my Home to Yours.  Frosting adapted from Hershey’s)
For the Cake:
1 1/3 c. flour
1/2 c. cocoa powder
1 t. baking soda
1/2 t. baking powder
1/2 t. salt
10 T. butter, softened
1/2 c. light brown sugar
1/2 c. sugar
3 eggs
1 t. vanilla
1/2 c. chocolate chips
1/2 c. milk
1/2 c. boiling water

For the frosting:
1/2 c. butter
2/3 c. HERSHEY’S Cocoa
3 c. powdered sugar
1/3 c. milk
1 t. vanilla

12 Kit Kat Bars (with 4 pieces per bar)

1.  Preheat the oven to 350 degrees.  Spray twp 9 inch cake pans with cooking spray.

2.  In a medium bowl combine the flour, cocoa powder, baking sod, baking powder, and salt.

3.  Mix the butter and sugars together until the are well combined.  Then add in the eggs one at a time, beating after each addition.  Stir in the vanilla.

4.  Add in half of the dry ingredients, then the milk, and the remaining dry ingredients.  Stir well.

5.  Slowly mix in the boiling water until the batter is thin.  Stir in the chocolate chips.

6.  Pour the batter evenly between the two cake pans.  Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

7.  Cool the cakes for 5 minutes then run a knife around the edges of the pan.  Invert the cakes and cool completely.

8.  Melt butter for the frosting. Stir in cocoa powder. Add in the powdered sugar and milk, beat well.  Stir in the vanilla.

9.  Place one of the cake on a cake round.  Spread the top with the frosting.  Top with the second cake.

10.  Spread a thick layer of chocolate frosting on top of the cake and a thin layer on the sides.  Press the Kit Kat’s into the side of the cake.  Tie a ribbon around the cake.
