You know what holiday is coming up?  Of course you do!  It’s almost Valentine’s Day.  I have to tell you, Valentine’s Day has never been a favorite holiday of mine.  When I was in junior high and high school I never had a boyfriend on Valentine’s Day so it was always depressing.  Fast forward to college, I did have a boyfriend but I still wasn’t a fan of the holiday.  Fast forward again and I’ve been married for 3 years and Frank and I have been together for 9 years and it’s still not a favorite holiday for either of us.

I mean, why do you need a special day to tell someone you love them?  My husband and I tell each other how much we love each other at least several times a day.  We do little things for each other to show that we care.  It’s the little things on an average day that mean the most.  However, I do teach at an elementary school so Valentine’s Day is always a big deal.

Every year on the big day my instructional assistant and I go around and make sure all of our students have cards.  If they don’t they are usually easy to spot because they are either totally mad at the world or crying.  Never fear, I have a huge bag filled with an assortment of cards.  We will usually write the names of the kids in their class and then the student can sign their name.  You may think we do this to be nice…and you are right, we do.  But, we also do it to make the day easier on us because the kids are happy.

One thing I do like to do on Valentine’s Day is make my husband some type of treat.  We both love desserts and he swears I have ruined commercial desserts for him because of the goodies I make.  This year I think I’m going with these beautiful chocolate covered strawberries.  We both love typical chocolate covered strawberries and who could resist these bright pink ones sprayed silver with edible pearls?  No one!  Do yourself a favorite and make this easy no-bake dessert for your sweetie this year.

Chocolate Covered Strawberries for Valentine’s Day (a Hezzi-D original)
18 firm but ripe strawberries
8 oz. pink candy melts
Hot pink food coloring (optional)
Edible Pearls
Edible Silver Color Mist (I used Wilton)

1.  Start by taking the strawberries out of the refrigerator and setting them on the counter for 30 minutes to bring them to room temperature.

2.  Dry the strawberries off gently by using a paper towel.

3.  Melt the pink candy melts in the microwave in 30 seconds intervals, stirring after each heating.  When they are almost completely melted add 1-2 drops of hot pink food coloring and stir well.  If the chocolate begins to seize up, add a teaspoons of Crisco.

4.  Holding the strawberries by the stem, dip into the pink chocolate and allow to drip.  Immediately place on a sheet of waxed paper and sprinkle a few edible pearls onto the strawberry.  I placed mine to look like pearl “seeds” but you can just sprinkle them.  Repeat with remaining strawberries.

5.  Once the chocolate has hardened, lightly spray the strawberries with the silver color mist.  I sprayed some of my strawberries more than others so there is a real difference in the silver tone and pink tone of them.

6.  Set them on a pretty platter and serve.
