Triple Chocolate Cookie Cupcakes

I have always loved birthdays.  Growing up I don’t think I ever had my own birthday party…well, maybe my first birthday but I don’t remember that one.  I was born 3 weeks early and only 5 days after my dad’s birthday.  While I’m sure we would have shared a birthday party with just the two of us, we also shared with someone else.  My cousin Kristin was born 2 years, 2 days, and 2 hours BEFORE me and we have always had our birthday parties together.  Even now, at ages 33 and 35, we share a birthday party.

I know some people would hate sharing but honestly, we both liked it.  We even had a technique to opening up our presents because we often got the same outfits in different colors.  Mine were usually blue and hers were usually red.  Sharing a birthday was and is fun.  Now my husband shares our birthday party as well as he was born in the same month.  But I think the more the merrier and I enjoy sharing my birthday with my dad, cousin, and husband!

So when I found out that two of our friends had birthdays in the same weekend I quickly got to work on making some goodies.  I made one friend a cake and the other cupcakes, but the cake, frosting, and even designs were the same.  I made a rich chocolate base topped with fluffy chocolate frosting and rolled in crushed cookie crumbs.  Then just to make it a little sweeter I added a dollop of marshmallow frosting with a chocolate truffle on top.

These cupcakes were awesome!  I’m not even a huge chocolate cupcake fan and I loved them.  The cookies add a nice crunch to the cupcake and the dollop of marshmallow frosting cuts through the chocolate.  They were perfect for a birthday celebration and both recipients loved them!

2 c. flour

2 t. baking powder

1 t. salt

1 c. butter, softened

1 1/4 c. sugar

3 eggs

1 t. vanilla

1/3 c. cocoa powder

1/3 c. hot water

1/3 c. milk

For the frosting:

1 c. butter

2 c. powdered sugar

2 T. heavy cream

1 t. vanilla

3 T. cocoa powder

1 T. marshmallow fluff

20 vanilla or chocolate sandwich cookies, crushed

1.  Preheat the oven to 350 degrees.  Line 2 cupcake tins with 24 cupcake liners.

2.  In a medium bowl combine the flour, baking powder, and salt.  Mix well and set aside.

3.  In a large bowl mix together the butter and sugar.  Once combined, add in the eggs and beat well.  Add in the vanilla and stir.

4.  Add the flour mixture to the butter mixture and mix until just combined.

5.  In a small bowl mix the hot water and cocoa powder and mix until the cocoa powder has dissolved.  Stir into the flour mixture and mix well to combine.

6.  Stir in the milk until the batter is smooth.

7.  Fill the cupcake cups 2/3 of the way full and bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

8.  Remove from the oven and place on a wire rack until cool.

9.  Meanwhile, put the butter in a large bowl and beat until smooth.  Add in the powdered sugar, heavy cream, and vanilla.  Beat until desired consistency is reached.

10.  Remove 1/4 cup of the frosting and place in a small bowl.  Add the cocoa powder to the frosting remaining in the large bowl and beat until smooth.

11.  Add the marshmallow fluff to the 1/4 cup of reserved frosting and beat until smooth.

12.  Place the chocolate frosting into a piping bag and pipe onto the cupcakes.triple chocolate cupcakes 1

13.  Roll each cupcake in the cookie crumbs so that all but the very top is covered in them.  Then place the marshmallow frosting in a piping bag and pipe a small dollop on top of each cupcake.  Top with a chocolate truffle.

  1. Oh do those ever look sinfully delicious! I wish I was more of a baker or I would definitely attempt to make those. My friends and I are all chocoholics and that truffle on top–WOW. These cupcakes are a chocolate lovers dream. I was born in September and it wasn’t until I worked at my last job that I shared a birthday month with about 6 other people. I did not mind in the least! My Mom used to have to make me Jello birthday cakes when I was younger-Jello is still my absolute favorite food in all this world.
