Simple Tomato Sauce ( 3 ingredient)

I’m a little late to the game on this one but have you heard of the 3 ingredient tomato sauce?  It’s been going around for the last few years and I’ve heard how amazing it is but with only 3 ingredients I’ve been skeptical to say the least.  Then last week I didn’t do so well menu planning, it was the end of the week, and I had very little in the way of food so this sauce was all I could make.  What can I say?   I’m ready for school to be out for summer!

The sauce was easy to make and smelled incredible as it was cooking.  No it wasn’t the typical garlic that I normally smell when I’m making marinara sauce.  It was the rich scent of butter mixed with the tomato and onion.  I poured it over top of the pasta, topped it with a little Parmesan and….Delicious!  Very surprisingly but the sauce was rich in flavor and tasted great with the pasta.  I’m definitely making this a staple in our household!

Simple Tomato Sauce (3 ingredients) (as seen on Smitten Kitchen)
28 oz. whole peeled tomatoes in a can, preferably San Marzano
5 T. butter
1 onion, peeled and halved
salt to taste

1.  Put the tomatoes, butter, and onion halves in a large saucepan over medium heat.  Bring to a simmer and lower heat to low.  Continue to simmer for 45 minutes, stirring occasionally and crushing the tomatoes against the side of the pan.

2.  Remove the sauce from heat and discard the onion.  Taste the sauce and season with salt if needed.

3.  Toss the sauce with up to 1 pound of pasta and sprinkle with fresh grated Parmesan cheese.
