During the week I usually end up making rice whenever we have an Asian meal for dinner. I also make rice with many of our Mexican meals as well and some weeks I get a little “riced out”. This was one of those weeks and in desperation I started searching for an easy Asian style noodle dish to serve in place of the rice.
These soba noodles with a sweet ginger scallion sauce looked delicious. I changed some of the ingredients and made it more of a sweet and spicy sauce. I also didn’t use soba noodles but instead used thin noodles that I bought at the Asian market in the Strip District in Pittsburgh. I’m not sure what they are called but they are dried and come in a packaged wrapped up in a ball. They worked well in this dish because they soaked up the sauce.
I’m a huge noodle fan so these were the perfect side dish to go with our Mu Shu Tofu. They have a distinct taste of soy sauce along with a slight sweet flavor and then they finish with some heat. The flavor combination was really tasty.
Soba Noodles with a Sweet and Spicy Ginger Scallion Sauce (adapted from Simply Reem)
10 oz. Soba noodles
1 c. scallions, chopped
2 T. fresh ginger, minced
3 garlic cloves, minced
2 t. chili oil
3 T. soy sauce
2 T. rice vinegar
1 T. sesame oil
2 T. honey
1 t. black pepper
1. Cook the noodles according to the package directions. Drain and keep warm.
2. In a medium bowl combine the scallions, ginger, garlic, chili oil, soy sauce, rice vinegar, and honey. Mix well.
3. Heat the sesame oil in a large skillet over medium heat. Add the drained soba noodles and toss to coat.
4. Pour the scallion sauce over top of the noodles. Toss to coat. Cook for an additional 2-3 minutes or until the sauce is heated through. Sprinkle with black pepper, squeeze a lime wedge over the top, and serve warm.
