The end of the school year is always especially busy for me. As a special education teacher I have IEP meetings to attend, trainings to go to, I have to teach, and my students are starting to struggle. While I officially have a 30 minute lunch everyday I often find myself either in the cafeteria speaking with my students or sitting in my own classroom and having lunch with them. This means that while I still technically have 30 minutes I don’t have much time to prepare a meal. That’s where New LEAN CUISINE® Marketplace meals come in.
I know I’ve mentioned in the past that I often will have a LEAN CUISINE® meal for lunch. I really like some of their vegetarian options like the French Bread Cheese Pizza and the Fettuccine Alfredo. They are easy to make in the microwave and they taste good. I can pop one in the microwave while keeping an eye on my students and in several minutes it’s ready to be eaten. In fact, I always keep one in the freezer part of my mini refrigerator at work just so I have a decent meal in case I forget to pack my lunch in the morning.
To be honest, I also keep a stock pile of LEAN CUISINE® meals in my freezer at home as well because my husband and I will often get busy working on projects and when we look at the clock we realize how hungry we are. Instead of trying to find something to make, taking the time to cook and prepare it, we simply grab a LEAN CUISINE® out of the freezer and it’s ready to eat in 5-7 minutes.
I’m excited that LEAN CUISINE® has come out with many new dishes. When I went to Walmart last week I was able to find many of these new marketplace meals including gluten free options, options that are protein packed, and even options made with organic ingredient options like Vermont White Cheddar Mac & Cheese made with organic pasta. The Mac and Cheese is simply delicious. It’s creamy, cheesy, and makes a great lunch entree.
So many people today are leading gluten free lifestyles for one reason or another and I’m excited that LEAN CUISINE® is offering new recipes with modern health benefits such as their gluten free line. I tried the LEAN CUISINE® Marketplace Spicy Beef & Bean Enchilada and enjoyed this dish. The enchilada was tasty, the sauce was surprisingly spicy, and the beef and beans made the dish filling. It’s served with a side of rice which makes it a complete meal that’s perfect for lunch or dinner.
Several days during the week I go to aerobics or Zumba after work. On these days I like to eat more protein because it generally makes me feel full and it helps keep me full during my workout. The LEAN CUISINE® high protein varieties are perfect for for these days. Last week I tried the Marketplace Sweet & Spicy Korean Style Beef which is served with rice and vegetables. The sauce is really good and has a kick of heat with a nice sweetness for balance. I ate this around 12:30 one day and had aerobics at 4:30 and felt great all during my workout. It’s nice to be able to get my protein in without having to cook myself a piece of meat in the morning before I go to work. With LEAN CUISINE® all I have to do is grab a meal out of the freezer and get myself to work.
