Last weekend I took a trip to Greensburg, PA. My husband was actually born there and was telling me about a great little Italian market that was in the town. Now it’s about an hour and a half away from where we live but it’s only about 45 minutes from my parents house so it’s easy to stop on the way there.
We headed up with no real plan in mind other then to go to this market. When we arrived I was surprised by the look of it. It looked like any other market. Once inside things were different. They had one of the biggest olive bars I’ve ever seen! They also had a huge counter of fresh meats and cheeses, a nut bar, rows of fresh baked bread, Italian desserts and pastries, and tons of olive oils and vinegars.
While there I bought a pound of homemade ricotta cheese for $1.50. We bought homemade mozzarella and some other specialty cheeses. My husband purchased some of the meats. We tried a few of the breads. I bought blood orange olive oil and vinegar. Then there were the figs. There were rows and rows of figs in the produce section. I ended up choosing a package of dried Kalamata figs.
I’ll be honest, I had no clue what Kalamata figs were. I bought them because they were whole dried figs and they would keep for a longer period of time. After some research I found that Kalamata Figs are from the south of Greece. They are dried in a natural way which preserves their nutrition. They are often eaten by themselves or on a cheese plate. They can also be put in baked goods.
I decided to use them in my homemade granola. I love making homemade granola to put in my yogurt or to eat with my cereal. I make it using oats, flax seeds, honey, and sea salt. It’s one of my favorite combinations. I added in the Kalamata figs and walnuts for crunch and I had my granola.
I like this granola a lot in my vanilla yogurt. It’s crunchy, the walnuts add a bit of flavor, the honey adds some sweetness, and the figs are chewy and flavorful. The little bit of sea salt is a great bit of savory to this granola. You’ve got to try it for yourself but I guarantee you are going to enjoy it!
- 2 c. old fashioned oats
- ½ c. flax seeds
- 1 t. cinnamon
- 1 t. sea salt
- 1 T. vegetable oil
- 3 T. honey
- ½ c. Kalamata figs
- ⅓ c. walnuts, chopped
- Preheat the oven to 350 degrees.
- Line a baking sheet with parchment paper.
- In a small bowl combine the oats, flax seeds, cinnamon, and sea salt. Add the vegetable oil and toss to combine.
- Pour the mixture onto the prepared baking sheet. Drizzle the honey over top of the granola.
- Bake for 10 minutes then stir the granola. Bake for 10 additional minutes.
- Remove from oven and add the figs and walnuts. Quickly toss to combine.
- Allow to cool for 20 minutes before packing in an air tight container.
