Who likes garlic? Let’s be honest, I go through a lot of garlic in a month. I use it in many of my dishes. So when I saw that this months Bread Bakers challenge was to make bread with garlic my problem wasn’t what to make but which garlic recipe to make.
One of my favorite recipes is a garlic bread that has the garlic and butter swirled in the middle of it. It’s so awesome but I wanted to do something a little different for this challenge. Since we were having soup for dinner I thought it would be nice to make dinner rolls to go along with it. I often just make cornbread muffins or biscuits because they are so easy but I had some extra time and I wanted to make yeast rolls.
I went back to one of my favorite combinations…garlic and cheddar. You can’t go wrong with cheese and garlic! This is a soft bread dough that makes fluffy rolls with just enough garlic and cheddar that you can taste it. If you like a lot of garlic feel free to double the amount you put in this recipe.
I used a new yeast for these rolls, Red Star Platinum Yeast. I’m often skeptical of different types of yeast but this one is a winner. During the initial five minutes of soaking the yeast in warm water it was bubbly and rising. I mixed together my dough and placed it in a warm place to rise. It grew more then double in under an hour! Check out that gorgeous rise!
After I punched the dough down I divided it in half. I placed one half in two freezer bags to keep for later and turned one half into 10 dinner rolls. I simply cut them into 10 pieces, rolled them into balls, and placed them in a muffin tin. They did another rise and then I popped them in the oven. In hindsight I think next time I would brush the tops with butter and sprinkle them with additional garlic but they were still delicious the way they were.
The rolls were soft and fluffy. There was a subtle garlic flavor and cheese throughout the rolls. I spread a little bit of butter on a hot roll and it was amazing! We managed to keep them in a container for 4 days and enjoyed them throughout the week. They were great with the soup but I also enjoyed them with a salad and just for a snack.
