Spring is finally here!  Last weekend we had a crazy cold front that ended in us receiving 4 inches of snow…in April!    I’m tired of this cold weather and I’m totally ready for spring.  After that bit of cold and snow I was determined to get in the kitchen and make something that reminded me of spring.

Delicious spring ingredients make a tasty Pea and Green Onion Crostini

Since spring vegetables are just starting to appear in our region I went looking for what was available at the market.   I was in Walmart and found spring peas and green onions.   My wheels started turning and I thought maybe I could make a fun spring crostini with both of them.  I had a choice between spring peas in their shells and already shelled peas.   In most cases I would choose peas in the shell but since I was looking at making crostini, I wanted something fast because appetizers shouldn’t take a ton of time to make.

I normally make crostini on bread but I was looking for something a little better for me.  I found Wasa Multigrain Crackers in the cracker aisle and they were just what I was looking for.  Wasa Multigrain Crackers include four perfectly blended wholesome grains including rye, wheat, oats, and barley.  They were also rectangular in size and very sturdy so I knew they would stand up well if I piled them high with fresh spring vegetables.

When I got home I placed the peas and green onions in my food processor and then started thinking of how to create this crostini.  I blended them together along with lime juice and olive oil to make a healthy spread.   In addition to adding a ton of flavor I wanted to add some bright color to my appetizer as well.  I fried up a few pieces of bacon and grabbed some goat cheese from the refrigerator.

In order to put my crostini together I lined up the Wasa Multigrain Crackers on a cutting board and spread them with the spring pea and green onion spread.  Then I sprinkled on a bit of the goat cheese and a few pieces of bacon.  I finished the dish off with a sprig of thyme and a few chopped chives.

The crostini was so bright and gorgeous looking.   I couldn’t wait to take a photo and had a big bite as soon as I finished making them.   Before I tell you how they tasted let me be honest.   I’m not a huge fan of peas.   I can eat them when they are in foods but I’m not a big fan of them on their own.  However, one bite of this delicious spring time crostini and I was sold!

The peas and green onions were flavorful and had a great texture.  The cheese added a creaminess while the bacon added some saltiness.  The Wasa Multigrain Crackers not only held up well to all of the fresh toppings but they were absolutely delicious as the crostini.  I’m not sure I could have made another appetizer that so captures a taste of spring like this crostini does.

Spring Pea and Green Onion Crostini

Get a taste of spring with this delicious Spring Pea and Green Onion Crostini topped with goat cheese, bacon, and fresh herbs.

Ingredients

  • 16 Wasa Multigrain Crackers
  • 2 c. spring peas, shelled
  • 6-8 green onions, roughly chopped
  • 2 Tablespoons fresh lime juice
  • 1/4 c. extra virgin olive oil
  • salt and pepper
  • 1/4 c. goat cheese, crumbled
  • 4 slices bacon, cooked and chopped
  • 16 fresh thyme sprigs
  • 6 chives, chopped

Instructions

  1. Lay out the Wasa Multigrain Crackers on a cutting board or flat surface. Set aside.
  2. In a food processor combine the spring peas, green onions, and lime juice. While blending on high slowly add the olive oil until desired consistency is reached. Take the lid off and sprinkle with salt and pepper.
  3. Spread 1-2 tablespoons of the pea and onion mixture onto each cracker.
  4. Sprinkle with 1 teaspoon of goat cheese and a few pieces of bacon.
  5. Top with 1 fresh thyme sprig and a few pieces of chives.
  6. Serve immediately.
