One of my favorite things about the holidays is the food. My family comes together for a large dinner at every holiday and I always overindulge on the food because it’s totally my thing! On Thanksgiving I love to eat the turkey, mashed potatoes, gravy, and stuffing. Then on Christmas I enjoy the cheesy potato casserole, the homemade pierogies, and the vegetables. While I love eating all of this great food the food doesn’t always love me back.
I find that during the holidays heartburn can often creep up not only because of the foods I’m eating but also because of the amount of food. Heartburn and tummy troubles can ruin a perfectly good holiday. In addition to stocking up on digestive aides at Walmart I’ve also been looking for recipes that are “tummy friendly”. One of the easiest recipes I’ve found for the holidays are mashed potatoes. They are great because they don’t require many ingredients, they don’t take too long to make, and they are easy to take with you if you are traveling. The only problem with mashed potatoes is the milk. A lot of people have tummy troubles from milk. However, using LACTAID® lactose free milk and margarine instead of butter can really help cut down on holiday problems.
I decided to make rosemary mashed potatoes because rosemary rarely gives anyone problems. My recipe simply includes potatoes, margarine, salt, fresh rosemary, and garlic powder. I used garlic powder because I know fresh garlic can have sensitive people in knots but the powder generally leaves people symptom free.
These potatoes are really easy to make and they are delicious too. They are creamy, buttery, and have the taste of fresh rosemary which really adds to the dish. They are the perfect accompaniment to a holiday turkey or ham too! So why not make a big bowl of potatoes and take them to your next holiday gathering?

- 4 large potatoes
- ¾ c. Lactaid milk
- 6 T. margarine
- 2 t. salt
- 3 T. fresh rosemary, minced
- 1 t. garlic powder (optional)
- Peel the potatoes and chop into 2 inch pieces.
- Place the potatoes in a large pot and cover with water. Bring the water to a boil over high heat and continue to boil for 20 minutes.
- Remove the potatoes from the heat and drain.
- Place the drained potatoes in a large bowl. Mix with a hand mixer until the potatoes are broken up.
- Add in the milk and margarine and beat with the mixer until smooth.
- Add in the salt, rosemary, and garlic powder and mix for 1 minute.
- Serve with additional rosemary or margarine if desired.
