Alright people I’ve been in a cherry mood lately and that means cherries in everything!   You know that they are my favorite fruit and when they are on sale I usually buy pounds of them.   I tend to use half fresh and then pit, chop, and freeze the other half for later.

So far I’ve baked the cherries in bread, made a cake, baked up some desserts, and now I’m working on cocktails.  I’ve made cherry mojitos before and the sweetness of the cherries really works with the tartness of the lime juice.

what is a mojito?

A mojito is a classic Cuban cocktail. It is a refreshing and typically served over ice.  It’s made with a handful of ingredients including rum, mint leaves, fresh lime juice, sugar, and soda water.  The classic mojito is lime flavored but additional fruit flavors can be added to the mix.

This weekend I made a Cherry Berry Mojito.   What’s the difference between this and my classic cherry mojito?   In addition to the traditional mint and lime juice I added in cherries and blueberries as well as raspberry vodka.

ingredients:

  • raspberry vodka (or any other berry flavored vodka)
  • sweet cherries (either fresh or frozen)
  • fresh mint leaves
  • blueberries
  • simple syrup (see below for recipe)
  • fresh lime juice
  • sparkling water

The thing I love about this drink is the sweetness of the berries paired again the tartness of the lime juice.  Then you add in the cool, refreshing mint and it’s the perfect summer cocktail.

can i add different berries?

While I used blueberries you can use any combination of raspberries, blueberries, strawberries, or blackberries.   Use one of these or a combination, just make sure it’s the same amount as the blueberries.   You also don’t want to substitute the cherries as it is a cherry berry cocktail.

Making this moijto is really easy.  In a cocktail shaker (or a bowl) combine the vodka, cherries, mint, and blueberries. You will muddle them together until the juice has been released from the cherries and blueberries.

At this point you will need to strain the mixture into a tall glass over top of ice.  If you don’t have a cocktail shaker with a strainer you can use a fine mesh sieve to do this.

can you make this drink ahead of time?

If you are making a larger batch and doubling or tripling the amount for a party you can make it ahead of time.  Muddle the vodka with the mint and berries and strain into an air tight container.  Mix with the simple syrup and lime juice.  Refrigerate for up to 24 hours.  Before making the cocktail give it a good shake to mix everything together then pour over glasses fill with ice and add the sparkling water.

I absolutely loved the flavor of these mojitos.  They tasted so fresh from all of the berries but still have a bit of tartness thanks to the fresh lime juice.

To make it look a little more fancy you can garnish the side of the glass with a slice of lime and a fresh cherry.  Cut a small slit in each and hang them on the rim of the glass.

I made a single glass of these for myself but you could easily whip up a pitcher for a party which is my plan for next weekend.  Just multiply the recipe times the number of people you want to serve.
