St. Patrick’s Day is right around the corner and I’ve been looking for some food to make.   When I think of St. Patrick’s Day I typically think of Guinness beer and Irish soda bread.   Since I’m not a fan of either one I needed to look for something else.

When I looked up traditional Irish food a lot of different foods came up.  I found two of the most common foods to be corned beef and potatoes.   Do I like corned beef?   Not so much.   I’m one of those crazy people who orders a Reuben sandwich with turkey instead of corned beef.   Potatoes on the other hand?   One of my favorite foods.  However, I couldn’t find a recipe that screamed “Irish” and was made out of potatoes.

Colcannon is another Irish food but I’ve already made that recipe (and it’s awesome so make sure you check it out).  Apparently cabbage is a popular Irish food.  I like cabbage but I can’t eat it as a main dish.  It normally has to be in something for me to eat it.  So apparently I’m not cut out for Irish food but I kept on looking.

I finally settled on chocolate mint.  Is this a traditional Irish food?   No it is not but it is pretty popular for St. Patrick’s Day and it’s a flavor combination that I enjoy.  I’ve made a ton of different chocolate mint recipes such as cupcakes, cake, cookies, and even fudge.   So it was time to make something different.

I found this fun dip recipe that would be great as a snack or for dessert.   It’s basically a cookie dough recipe minus the eggs and plus mint and chocolate chips.   It’s easy to whip up in about 5 minutes so it’s perfect for when unexpected guests show up.

The texture is similar to cookie dough but it’s a little looser and more like a dip.   Watch adding in the food coloring because I added too much and it made it a weird green color.   I wanted it to be more of a mint green but that didn’t happen.  The dip tastes a lot like cookie dough and has chocolate and mint added in it.  I served it with mint Oreos and graham cracker sticks for a tasty dessert dip.

Mint Chocolate Chip Cookie Dough Dip

Total Time: 10 minutes

A delicious cookie dough dip flavored with mint and chocolate chips!

Ingredients

  • 5 Tablespoons butter
  • 1/4 c. brown sugar
  • 1/4 c. sugar
  • 2 teaspoons mint extract
  • 1/4 teaspoon salt
  • 1 c. flour
  • 3 Tablespoons heavy cream
  • green food coloring
  • 1 c. mini chocolate chips
  • Oreos and graham cracker sticks for dipping

Instructions

  1. In a medium bowl combine the butter, brown sugar, sugar, mint extract, and salt.
  2. Using a hand mixer beat the mixture until smooth.
  3. Add in the flour, heavy cream, and green food coloring and mix well.
  4. Fold in the mini chocolate chips.
  5. Place the dip in a bowl and serve with Oreos and graham cracker sticks.
