Happy Meatless Monday!  I think eating meatless at least once a week is a great way to incorporate new vegetables and proteins into your weekly menu.  While I don’t always make a meatless meal on Monday, I do have a meatless entree at least once a week.

Sometimes we simply have a veggie packed quiche or a pasta dish.  Other times we have breakfast for dinner which usually means pancakes, fruit salad, and hash browns.  Sometimes we throw in some vegetarian sausage as well.  The one thing we try to have at least once a week is tofu.

Honey Sesame Tofu is easy to make and a delicious Meatless Monday Meal!

I know people think they don’t like tofu but you should give it a try.  It’s an easy to make protein that doesn’t cost a ton and it takes on the flavor of whatever you cook it with.  I didn’t try tofu until I was in my 20’s and the first several times I ate it I didn’t like it because of the texture.   Once I got used to that I started enjoying tofu and we eat it weekly.

Today I’m sharing a recipe for Honey Sesame Tofu.  I’ll be honest, most of our tofu recipes are Asian inspired and this one is no different.  I marinated the tofu and cooked it in the oven until it was firm and crisp.  Then I put it in the skillet along with the sauce and vegetables and cooked it until the sauce got thick.

Served along with vegetable egg rolls and rice this is an easy to make weeknight meal that is meatless and delicious. I love that the sauce is sweet and spicy and really sticks to the tofu.  This is a great way to try tofu for the first time!

Honey Sesame Tofu

Yield: serves 4
Prep Time: 15 minutes
Cook Time: 50 minutes
Total Time: 1 hour 5 minutes

A delicious crispy tofu in a sweet and slightly spicy sauce served with broccoli over top of rice.

Ingredients

  • 1 block extra firm tofu, pressed
  • 3 Tablespoons soy sauce
  • 1 teaspoon chili paste
  • 3 Tablespoons honey
  • 2 teaspoons oyster sauce
  • 1 teaspoon black pepper
  • 2 Tablespoons rice vinegar
  • 1 Tablespoon sesame oil
  • 1 c. broccoli florets
  • 3 garlic cloves, minced
  • 1 Tablespoon cornstarch
  • 1 Tablespoon sesame seeds
  • 2 c. prepared rice

Instructions

  1. In a bowl combine the soy sauce, chili paste, honey, oyster sauce, black pepper, rice vinegar, and sesame oil.
  2. Cut the tofu into 1 inch cubes and place in the marinade. Refrigerate for 30 minutes.
  3. Preheat the oven to 375 degrees. Spray an 8 x 8 baking dish with cooking spray. Place the tofu in the pan reserving extra marinade.
  4. Bake for 20 minutes, turn the tofu over, and bake for another 20 minutes.
  5. In a large skillet place the reserved marinade, garlic cloves, and cornstarch. Whisk to combine.
  6. Place the skillet over medium heat and add in the broccoli. Cook for 3-4 minutes.
  7. Add in the tofu and increase heat to medium high. Cook for 3-5 minutes or until the sauce has thickened and is sticking to the tofu and broccoli.
  8. Remove from stove and sprinkle with sesame seeds. Serve over rice.
