Blackberry Pecan Oatmeal Bowls with Omega-3s

Let’s talk about breakfast.  Most days my breakfast consists of either a few pieces of toast or a bowl of oatmeal.  I like making instant oatmeal so it’s ready quickly and I can eat it on my way out the door.  When I’m feeling really fancy I like to add in a few fruits or nuts and make an Oatmeal Bowl.

Oatmeal bowls are so simple to make because you can customize them any way you want.  In my case I made the instant oatmeal with half milk and half water and added in some cinnamon for spice.  Once it was cooked I started with the toppings.  I had just bought blackberries and knew they would be delicious with a spiced oatmeal.  I placed them on either side of the bowl and then looked in my cupboard for other goodies.

I took a clementine, peeled it apart, and placed the sections down the middle of my bowl.  I have to say, oatmeal bowls are partly about look and partly about flavor.   I like playing around to make mine look really pretty.  Now that I had the fruit on top I wanted to add in some nuts for additional crunch.  I had almonds and pecans and opted for the pecans.  Then I sprinkled on some chia seeds as well.

Since oatmeal is a healthy option I figured why not add in some Seriously Delicious Omega-3s from Barlean’s?   These Seriously Delicious Omega-3s come from either fish oil or flax oil.  Now I’m not one to usually like fish or flax oil because the after taste is really gross, especially the burps.   These have absolutely none of those and they come in a variety of delicious flavors.

I tried the Lemon Creme, Key Lime, and the Passion Pineapple Smoothie.  I can say that all three have a great flavor with no after taste.   I can simply put them on a spoon and take them daily to get all the benefits of Omega-3s or I can put them on top of a recipe like my Blackberry Pecan Oatmeal Bowls.   I took the Barlean’s Seriously Delicious Omega-3s in Lemon Creme and simply drizzled it on top of the oatmeal bowls for a sweet and tangy lemon flavor that worked so well with them oatmeal.  No one would ever know the Lemon Creme had Omega-3s in it!

Blackberry Pecan Oatmeal Bowls

Yield: serves 1
Prep Time: 10 minutes
Cook Time: 2 minutes
Total Time: 12 minutes

Spiced oatmeal topped with pecans, blackberries, chia seeds, clementines, and a Seriously Delicious Omega-3s Lemon Creme drizzle.

Ingredients

  • 1/2 c. instant oat
  • 1/2 c. water
  • 1/2 c. milk
  • 1 teaspoon cinnamon
  • 1/2 t. salt
  • 1/4 c. blackberries
  • 1/4 c. pecan halves
  • 1 clementine
  • 1 Tablespoon chia seeds
  • 1 Tablespoon Barlean's Seriously Delicious Omega-3s in Lemon Creme

Instructions

  1. Place the oatmeal, water, milk, cinnamon, and salt in a microwave safe bowl. Mix well.
  2. Heat on high in the microwave for 1 1/2 to 2 minutes. Remove from microwave and mix well.
  3. Place half the blackberries on one side of the bowl and half on the other side of the bowl.
  4. Place the clementine sections down the middle of the bowl.
  5. Place the pecans in between the blackberries and clementines on one side and sprinkle the chia seeds on the other.
  6. Drizzle the whole bowl with the Lemon Creme.
  7. Serve warm.
