I live in a place where it is pretty much cold October through April. We could get snow at any point during those 7 months. We’ve even had a few flurries in May before. It’s funny because most people don’t think of my state as one to be that cold but we live in a higher elevation and get a lot of snow every year.
That makes grilling tough. We love to grill out and do so pretty much 3 to 4 times a week between May and September but it’s hard when it’s cold and snowy outside. It’s even harder when there is ice and you can’t move the grill because it’s frozen to the ground. That’s when an indoor grill comes in handy.

I made a tasty BBQ Rubbed Grilled Chicken to share today. I’ve been using this BBQ seasoning for all sorts of things. I like it on top of popcorn, sprinkled and baked on pretzels, sprinkled on vegetables, and as a dry rub for meat. It’s so versatile and it’s easy to whip up a batch.
While you can certainly make a single batch I’ve found that I like to make a big bulk batch and store the BBQ rub in an air tight container so I don’t have to mix it up every time I want to use it which is a lot. When making this chicken simply rub the chicken with the BBQ rub and allow it to sit for about 10-15 minutes while your indoor grill is heating up.
Then put it on the grill, keep an eye on it, and pull it off when it’s cooked through. That’s it! You’ll get a juicy piece of chicken with a delicious flavor. I don’t even need to dip this one in sauce and it’s super healthy since it’s grilled. Give it a try this summer!
- 4 boneless chicken breasts
- 2 T. paprika
- 2 T. brown sugar
- 2 t. salt
- 2 t. chili powder
- 2 t. garlic powder
- 2 t. black pepper
- BBQ sauce (optional)
- Heat the indoor grill to 400 degrees.
- In a small bowl combine the paprika, brown sugar, salt, chili powder, garlic powder, and black pepper. Mix well.
- Rub the mixture all over the chicken breasts.
- Place the chicken on the indoor grill, shut the lid, and cook for 5 minutes per side or until the internal temperature reads 165 degrees.
- Remove from grill and lightly brush with BBQ sauce if desired.
