Just one more week and I have to go back to school.  While I’m looking forward to seeing my kids I’m not looking forward to rushing around in the morning to get out the door on time.  I have no problem waking up early it’s simply the getting ready part that I need to work on.

Since it’s almost time to go back to school I’ve been working on a few after school snacks.  I know that sounds silly since I’m a teacher not a kid but man am I hungry when I get home from school!  Of course when working on these recipes I’ve been keeping in mind what kids would like to eat too and I think I’ve come up with a good one, especially since the days are still really hot.

Everything you need to make Strawberry Yogurt Pops with Granola

I made Strawberry Yogurt Pops with Granola.  The cool thing about this recipe is that not only is it good for an after school snack but it would be fine to enjoy as an on the go breakfast as well.  It’s filled with Greek yogurt, fresh strawberries, and granola which are all perfectly acceptable breakfast foods.  I used a sugar free flavored gelatin for calorie purposes but if you are giving it to a child you may want to go with the regular flavored gelatin.

Personal blenders are great for smoothies and popsicles!

In order to make this recipe I used my Proctor Silex Personal Blender from Hamilton Beach. While you don’t have to use a blender to make this recipe, it makes it so much easier and faster to do so!   I find when mixing Greek yogurt into liquids it takes forever for me to get it mixed and all the lumps out but using the personal blender it took just seconds.  Plus, how gorgeous is the teal color of this blender?   I’m seriously thinking about taking it to work with me so I can make smoothies for lunch!

These yogurt pops are really good.  They are creamy with a strong strawberry flavor and studded with lots of fresh strawberries.  The granola at the bottom adds a nice crunch and a little flavor.  The fun part is you can substitute any flavor of gelatin and any berries into this recipe to make it the way you or your child would like it.

Strawberry Yogurt Pops with Granola

A creamy strawberry yogurt freezer pop mixed with fresh strawberries and finished off with a sprinkle of granola.

Ingredients

  • 1 package strawberry gelatin I used sugar free
  • 1/4 c. hot water
  • 5.3 oz. plain Greek yogurt
  • 3/4 c. milk
  • 1/2 c. strawberries chopped
  • 1/4 c. granola

Instructions

  • Place the strawberry gelatin and hot water in the single serve blender. Place the lid on and blend for 10 seconds or until gelatin has dissolved.
  • Add the Greek yogurt, replace the lid, and blend for 30 seconds or until smooth.
  • Pour in the milk, place the lid on, and blend for 10 seconds.
  • Pour the mixture into 6 ice pop molds. This should fill them 3/4 of the way full.
  • Drop strawberry pieces into each pop leaving a 1 inch space from the top of the pop mold. Gently mix the strawberry pops with a butter knife.
  • Sprinkle the top of each with granola.
  • Place the stick into each mold and freeze for at least 4 hours.
