The air is finally getting cooler and I think that fall may be here to stay.  Over the last few years I think fall may be starting to win as my favorite season.   It certainly is my favorite food season with Thanksgiving, pumpkin, apples, and spices.   I can’t get enough of fall food!

I’ve been doing a lot of baking over the last few weeks and I’ve found that by combining some of my favorite fall flavors I can come up with some new dishes that are even more flavorful and delicious.  In this Caramel Apple Pecan Cobbler I’ve combined apples, pecans, spices, and caramel all into one tasty fall dish.   Just the name of this dish had my mouth watering the first time I saw it.

Caramel Apple Pecan Cobbler is a simple but flavorful dessert.

Lucky for me my husband was able to get to the farmer’s market this past week and he picked up a basket of apples.   I love getting fresh picked apples from one of the local orchards.   They always have baskets of the “good” apples and then they have cheaper baskets of bruised apples which are great for baking.  I don’t mind picking up a bruised basket if I have something in mind to bake because at times they are almost half off the price of pretty apples and they taste just as great!

While the original recipe I looked at called for making homemade caramel sauce I just didn’t have it in me.  I love caramel sauce and homemade is amazing but in all honesty we had 3 bottles of caramel sauce open in our house so I just used one of those.  Want to know a secret?   It tasted totally awesome in this dish and I’d do it again!

There are chopped Millican Pecan pecans in both the apple filling and the topping of this dish.  If I were to make it again I would probably chop up some of the Millican Cinnamon Candied Pecans for the topping to give it added spice and crunch.  I only used the regular pecans which are awesome but I thought the cinnamon ones would add some great flavor to the topping.

To put it all together I simply placed the apple filling in a pan then poured the caramel sauce over top.  Then I sprinkled the topping over top of everything.   As this was baking in the oven I could hardly stop myself from opening the oven just to get a whiff of it.  The air in the kitchen smelled of caramel, cinnamon, and sweetness.  I couldn’t wait to dig in.

While vanilla bean ice cream would be amazing on top of this we simply didn’t have any in the house.  We did have whipped cream which proved to be a delicious substitute.  The cool whipped cream paired with the still warm cobbler was perfection.  The apple get warm and soft while the caramel sauce has hints of cinnamon in it and there is a crunch from the pecans.  The topping is crumbly and delicious and the whipped cream added a creaminess to the entire dish.  I could have eaten this entire pan by myself but this is a great fall dessert to share after a dinner party or just for enjoying with drinks.

Caramel Apple Pecan Cobbler

Warm and soft apples in a spiced caramel sauce studded with crunchy pecans and topped with an oat pecan topping makes for the perfect fall dessert.

Ingredients

For the apple filling:

  • 3 large or 4 medium apples peeled, cored, and sliced (I used half Granny Smith, half Gala)
  • 1/2 c. brown sugar
  • 1 teaspoons lemon juice
  • 2 teaspoons corn starch
  • 1 teaspoons cinnamon
  • 1/2 c. Millican chopped pecan pieces
  • 3 teaspoons caramel sauce

For the topping:

  • 3/4 c. old fashioned oatss
  • 1 c. flour
  • 1/2 c. brown sugar
  • 1 teaspoons baking powder
  • 1 teaspoons salt
  • 1/4 c. Millican chopped pecan pieces
  • 1 stick butter

Instructions

  • Preheat the oven to 375 degrees. Spray an 8 x 8 baking dish with cooking spray and set aside.
  • In a medium bowl combine the apples, brown sugar, lemon juice, corn starch, cinnamon, and pecans. Mix well and add to the baking dish.
  • Pour the caramel sauce over top of the apple mixture.
  • In a medium bowl combine the oats, flour, brown sugar, baking powder, salt, and pecans. Mix well.
  • Using your hands, mix the butter pieces into the flour mixture until the mixture resembles wet sand.
  • Sprinkle the topping over top of the apples.
  • Bake for 30-35 minutes.
  • Turn your oven to broil and broil for 1-2 minutes or until the top is dark golden brown.
  • Remove from oven and serve with ice cream or whipped cream.
