Old Bay Cheddar Biscuits

Fluffy biscuits studded with cheddar cheese and Old Bay seasoning are delicious with soups and chowders.

The winter where I live seems to last about half the year so we eat a lot of soup in our house.  I have a few favorites that I rotate like my Slow Cooker Vegetable Beef Soup and my Chicken and Dumpling Soup.  Then we have a few soups that we only have a couple of times a year like this Broccoli and Cheddar Soup or Clam Chowder.

Whenever we have soup for dinner I like to make rolls.   I usually do this on the weekend since they need to rise before they are baked.

However, we don’t always have soup on the weekends so I need something a little bit quicker.   In this case I usually try to make biscuits.  I even keep a jar of homemade biscuit mix in my pantry so I can whip them up quickly.

what are biscuits?

In the United States a biscuit is a type of bread that is soft, flaky, and leavened with baking powder or baking soda. Biscuits can be made with various ingredients, but the basic recipe typically includes flour, baking powder or baking soda, salt, and fat (such as butter or shortening). They are quick to make and are known for their tender and flaky texture.

I wanted to try something a little different to go with our Clam Chowder and since I live in Maryland the clear answer was Old Bay.  I’ve had some Cheddar and Old Bay Biscuits before and they were amazing so I set out to make my own version.

Ingredients:

  • all purpose flour (I’ve also made these with a pastry blend flour which makes them extra tender)
  • baking powder
  • baking soda
  • salt
  • Old Bay Seasoning (find it in the spice aisle of most stores)
  • butter (I used salted but you can use unsalted)
  • cheddar cheese (shredded or shred it yourself)
  • garlic cloves
  • milk (we use whole milk which works best)

These Old Bay Cheddar Biscuits are drop biscuits which makes them really easy to make and bake.

What are Drop Biscuits?

Drop biscuits are a type of biscuit that is quick and easy to make because the dough is simply dropped onto the baking sheet, rather than being rolled out and cut into shapes. The term “drop” refers to the method of spooning or dropping portions of the biscuit dough onto the baking surface. This eliminates the need for rolling and cutting, making drop biscuits a convenient and less labor-intensive option.

To make the biscuits preheat the oven to 400 degrees. Then line a baking sheet with parchment paper or spray it with baking spray.  Set aside.

In a large bowl combine flour, baking powder, baking soda, and salt. Add the cold butter and work it into the dough using your fingers until pea sized crumbs form.

Add in the cheese and garlic and toss to combine with the flour mixture.

Stir in the milk just until a dough forms.  Drop by 2 tablespoons onto the baking sheet. Leave 2 inches between each biscuit.

Bake for 15 minutes. Remove from oven and brush with a combination of butter and Old Bay.  Serve warm.

How do I store the biscuits?

Biscuits can be stored in a large plastic bag or an air tight container for 3-5 days.  When ready to enjoy heat in the microwave for 15-20 seconds and serve warm. 

 

These biscuits puffed up nicely in the oven and were crispy on the outer edges but soft and fluffy inside, even with the cheddar cheese which traditionally weighs down biscuits.  They were full of flavor and the Old Bay and butter mixture on top added a bit of saltiness and spice.

Ingredients

  • 2 c. all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons Old Bay Seasoning
  • 6 Tablespoons cold butter cut into small pieces
  • 1 c. shredded cheddar cheese
  • 2 garlic cloves minced
  • 3/4 c. milk

For brushing on top:

  • 2 Tablespoons butter melted
  • 1 teaspoon Old Bay Seasoning
  • 1 teaspoon dried parsley

Instructions

  • Preheat the oven to 400 degrees. Line a baking sheet with parchment paper or spray it with cooking spray.
  • In a large bowl combine the flour, baking powder, baking soda, and salt.
  • Add the cold butter and work it into the dough using your fingers until pea sized crumbs form.
  • Add the cheese and garlic cloves and toss with the flour mixture.
  • Pour in the milk and stir until just combined.
  • Drop by 2 tablespoons onto the parchment paper lined baking sheet, leaving 1-2 inches in between each biscuit.
  • Bake for 15 minutes or until the edges are golden brown. Remove from oven.
  • Add the Old Bay and parsley to the melted butter and mix. Brush the butter mixture over the hot biscuits and serve warm.
