Parmesan Crusted Haddock + Fulton Fish Market

I received a box of fish from Fulton Fish Market but all opinions are 100% my own.

Have you heard of Fulton Fish Market?  It’s an amazing fish company located in New York that will send fresh seafood and fish right to your door!

I received the largest shrimp you’ve ever seen, fresh haddock, and gorgeous salmon.  I couldn’t wait to try it all!  They have a huge selection of fish, some that I’ve never even heard of.  They also have specialty items like sea urchin, caviar, and eel that can’t just get anywhere.   I was extremely pleased with the items I received and will definitely be ordering more in the future.

Since haddock is a fish I’m used to working with the first thing I made was this Parmesan Crusted Haddock.   The think I liked best about this recipe is that it wasn’t just breadcrumbs and Parmesan on top of a piece of fish.  So often I find that’s the case.

For this recipe you will need:

  • haddock
  • breadcrumbs
  • Parmesan cheese
  • butter
  • mayonnaise
  • Worcestershire sauce
  • hot sauce
  • lemon juice
  • salt and pepper

Instead of making a separate bowl for the dry ingredients and wet ingredients in this recipe everything is mixed together in one bowl making it so easy!  Then the fish are patted dry and placed in a baking dish.  The mixture is spread on top of the fish and everything is put in the oven to cook.

After baking for 10 minutes the fish is broiled to get a golden brown crust and then it’s finished.   I was a little skeptical about the top crust only on the fish but it totally works in this case.   The fish cooks perfectly and the crust sticks to it to give it both crunch and flavor.

My husband and I absolutely loved the crust on top.   It was so flavorful.   I could taste the sharp Parmesan cheese, the crunchy breadcrumbs, and a bit of the rich butter and a touch of hot sauce.  It was complex and worked well on top of the haddock.

The fact that it only goes on top of the fish was perfect.   It didn’t overpower the fish, it complimented it.  I think had the entire fish been covered it might have been too much.  Give this easy weeknight meal a try!

Pro Tips and Substitutions:

  • You can substitute any mild white fish in this recipe.  Good choices include tilapia, cod, or halibut.
  • If you like a crunchier crust use panko breadcrumbs in place of the regular breadcrumbs.
  • This fish is great served with just a wedge of lemon on the side.

Ingredients

  • 3/4 c. breadcrumbs
  • 3/4 c. Parmesan cheese finely grated
  • 3 Tablespoons butter melted
  • 3 Tablespoons mayonnaise
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon hot sauce
  • 1 Tablespoon lemon juice
  • salt and pepper
  • 2 lb. fresh haddock filet

Instructions

  • Preheat the oven to 400 degrees. Spray a baking dish with cooking spray.
  • In a medium bowl combine the breadcrumbs, Parmesan cheese, butter, mayonnaise, Worcestershire sauce, hot sauce, lemon juice, salt, and pepper. Mix well and set aside.
  • Pat the fish completely dry with paper towels and then arrange in the baking dish.
  • Spread the breadcrumb mixture over top of each fish filet and press down to make sure it sticks.
  • Bake the fish for 8-10 minutes until it is cooked through.
  • Put the fish under the broiler for 1-2 minutes to make the crust golden brown.
  • Remove from oven and serve immediately.
