Pumpkin Cookies with Brown Butter Frosting
For the cookies:
  • 2½ c. flour
  • 1 t. baking soda
  • 1 t. baking powder
  • 1 t. pumpkin pie spice
  • 1 t. sea salt
  • 1 c. sugar
  • ½ c. brown sugar
  • 1 stick butter, softened
  • 1 c. pumpkin puree
  • 1 egg
  • 1 t. vanilla
For the frosting:
  • ¾ c. (1½ sticks) butter,
  • 2 T. brown sugar, packed
  • 1 t. pumpkin pie spice
  • 1 lb. powdered sugar
  • 1 t. vanilla
  1. Preheat the oven to 350 degrees.
  2. In a medium bowl combine the flour, baking soda, baking powder, pumpkin pie spice and salt. Set aside.
  3. In a large bowl cream the butter and sugar. Add in the pumpkin, egg, and vanilla and mix well.
  4. Slowly pour the flour mixture into the butter and sugar mixture. Mix until well combined.
  5. Drop the pumpkin batter onto the cookie sheets by rounded tablespoon.
  6. Bake for 15-18 minutes or until the cookies look firm. Remove from oven and cool for 2 minutes before removing to a wire rack.
  7. To make the frosting place 1 stick of butter in a small saucepan. Allow it to cook over medium heat. Swirl the pan occasionally and check the color until it begins to brown. Once it starts to brown begin swirling it constantly until it's a golden brown and smells nutty. Remove from heat.
  8. Add in the remaining butter and stir until combined. Add in the brown sugar, pumpkin pie spice, and vanilla. Miix well.
  9. Slowly add the powdered sugar a half cup at a time, stirring well after each addition, until it is the desired consistency.
  10. Spread the frosting on top of the cooled cookies.
