Ginger Bok Choy Salad with Grilled Chicken

Eat Smart Ginger Bok Choy Salad Kit topped with Sesame Ginger Grilled Chicken
  • 2 boneless, skinless chicken breasts
  • 3 T. soy sauce
  • 1 t. fresh ginger, grated
  • 1 t. black pepper
  • 1 Eat Smart Ginger Bok Choy Salad Kit
  1. Place the chicken breasts in a freezer baggie. Add in the soy sauce, sesame oil, fresh ginger, and black pepper. Refrigerate for at least 2 hours or up to 24 hours.
  2. Heat a medium skillet over medium heat. Add the chicken breasts and cook for 5-7 minutes per side or until cooked through. Remove to a cutting board and let rest for 3 minutes.
  3. Divide the Ginger Bok Choy Salad mix between two plates. Sprinkle with peanuts.
  4. Cut the chicken breasts into 8 pieces. Divide between the two salads. Drizzle with sesame ginger salad dressing.
