Jalapeno Cheddar Mac N Cheese Bites + Holiday Party Planning

Macaroni and cheese gets a make over with two kinds of cheese and jalapenos baked into individual servings perfect for party appetizers!
Ingredients
For the mac n cheese bites:
  • 2 c. elbow macaroni
  • 2 T. butter, melted
  • 1 c. Kraft cheddar cheese, shredded
  • 1 c. Kraft Itailan blend cheese, shredded
  • ⅔ c. low fat milk
  • 3 garlic cloves, minced
  • 1 t. paprika
  • ½ t. dry mustard
  • 1 t. black pepper
  • ½ t. salt
  • 1 egg, beaten
  • 3 T. pickled jalapenos, minced
For the topping
  • ½ c. Stove Top Stuffing (dry)
  • 1 garlic clove, minced
  • 3 T. butter, melted
  • 1 t. black pepper
Instructions
  1. Preheat the oven to 350 degrees. Spray two muffin tins with cooking spray and set aside.
  2. Cook the macaroni noodles according to the package directions. Drain and set aside.
  3. In a large bowl combine the butter, cheddar cheese, Italian blend cheese, milk, garlic, paprika, pepper, and salt. Mix well.
  4. Stir in the beaten egg and the jalapenos.
  5. Add the cooked macaroni noodles and stir until the noodles are well coated.
  6. Spoon the macaroni mixture into the prepared muffin cups. Set aside.
  7. In a small bowl combine all the topping ingredients. Spoon 1 tablespoon of the mixture over top of each macaroni bite.
  8. Bake in the oven for 20-25 minutes or until the bites are browned.
  9. Remove from oven and allow to cool a few minutes before running a butter knife around the edges.
  10. Pop out the mac n cheese bites and serve hot.
