BBQ Chicken Fajitas + a Review of The Family Dinner Cookbook

BBQ Chicken Fajitas contain just 7 ingredients and are ready in a little over a half hour. These are flavorful and a delicious weeknight meal.
  • 1 c. instant white rice
  • 1 c. hot water
  • 1 T. taco seasoning mix
  • 4 small boneless, skinless chicken breasts
  • 4 T. prepared barbecue sauce
  • 1 each green and red bell pepper, cut into strips
  • ½ c. chunky salsa
  • ½ c. Mexican-style finely shredded cheese
  • Tortillas
  1. Preheat the oven to 400 degrees.
  2. Combine the rice, water, and taco seasoning and spoon onto greased heavy-duty foil or foil packet. (I divided the rice in between 4 packets)
  3. Top with remaining ingredients, spreading barbecue sauce on top of chicken.
  4. Seal each packet well, allowing room for heat to circulate.
  5. Bake for 35 minutes or until chicken is no longer pin in the center. Let stand for 5 minutes before serving.
  6. Serve with warm tortillas.
