Zoodles with Vodka Sauce

Zucchini noodles or "Zoodles" made with garlic and vodka sauce for a low calorie and gluten free meal!
  • 1 large zucchini
  • 2 t. olive oil
  • 1 t. sea salt
  • 1 t. black pepper
  • 3 garlic cloves, minced
  • ½ c. vodka sauce
  • 2 T. Parmesan cheese
  1. Cut the ends off the zucchini and then cut in half.
  2. Using a spiralizer, cut the zucchini into noodles.
  3. Heat the olive oil in a medium skillet over medium heat. Add the zoodles and sprinkle with salt and pepper.
  4. Saute the zoodles for 2 minutes, turning frequently. Add the garlic and cook for an additional 1-2 minutes.
  5. Remove from heat and toss with the vodka sauce.
  6. Divide into two bowl, sprinkle with Parmesan cheese, and enjoy!
