Slow Cooker Pork and Green Chile Stew

Pork loin, green chiles, and tomatoes made a spicy and flavorful stew that can be served over rice or quinoa.
  • 2 lb. boneless pork loin
  • 1 t. sea salt
  • 1 t. black pepper
  • 1 t. chili powder
3/4 c. onion, diced
  • 4 garlic cloves, minced
  • 2 cans (4.25 oz )green chiles
  • 2 T. chopped jalapeño
  • 10 oz can diced tomatoes
  • 1 c. chicken broth
1 T. cumin
  • 2 c. rice, cooked
  1. Season the pork loin with salt, pepper, and chili powder and place in the slow cooker.
  2. Add the onion, garlic, green chiles, jalapeno, tomatoes, chicken broth, and cumin to the slow cooker.
  3. Mix the ingredients together and spoon over top of the pork. Cover and cook on low for 8-10 hours.
  4. When ready to serve, shred the pork, place back in the slow cooker and mix with the juices. Serve over top of rice.
