A fun take on breakfast made into dessert form with these bacon and maple flavored cupcakes topped with buttercream frosting and a butterscotch "yolk".
For the cupcakes:
  • 1¼ c. flour
  • 1 t. baking powder
  • ½ t. salt
  • ½ c. butter, softened
  • ⅔ c. sugar
  • 2 eggs
  • 1 t. vanilla
  • ¼ c. milk
  • 3 T. maple syrup
  • 4 bacon slices, cooked and crumbled
For the frosting:
  • 1 c. butter (2 sticks) softened
  • 3-4 c. powdered sugar
  • 1 T. vanilla
  • 2-3 T. milk
For the decoration:
  • 2 T. poppyseeds
  • 12 butterscotch candies
  1. Preheat the oven to 350 degrees.
  2. Line a muffin tin with 12 cupcake liners. Set aside.
  3. In a medium bowl combine the flour, baking powder, and salt. Mix and set aside.
  4. In a large bowl cream together the butter and sugar. Add in the eggs and mix well. Stir in the vanilla.
  5. Add half the flour mixture to the butter mixture and mix well. Stir in the milk and mix until completely combined. Add in the remaining flour and mix until combined.
  6. Stir in the maple syrup and mix well. Fold in the bacon.
  7. Pour the batter into prepared muffin cups, filling them ⅔ of the way full. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool completely on a wire rack.
  9. To make the frosting beat the butter until smooth. Add in the powdered sugar a half cup at a time until desired consistency is reached. Stir in the vanilla and milk and mix until smooth.
  10. Frost the cupcakes by placing a spoonful of frosting on each one and smoothing it out.
  11. Sprinkle poppyseeds on top of the frosting and place an unwrapped butterscotch candy in the center.
