Strawberry Lemonade Cupcakes

Serves: 2 dozen cupcakes
Strawberry cupcakes filled with sweet and tart lemonade frosting.
For the cupcakes:
  • 1 box strawberry cake mix
  • 1 c. water
  • ⅓ c. vegetable oil
  • 3 eggs
For the frosting
  • 2 sticks butter, softened
  • 2 T. lemon juice
  • 1 package of single serve lemonade mix
  • 3-4 c. powdered sugar
  1. Preheat the oven to 350 degrees. Place 24 cupcake liners in 2 muffin tins and set aside.
  2. In a large bowl combine the strawberry cake mix, water, vegetable oil, and eggs. Mix for 2 minutes or until well combined.
  3. Fill the muffin cups with the cupcake batter ⅔ of the way full.
  4. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  5. Remove from the oven and cool completely on a wire rack.
  6. In a large bowl beat the butter until smooth. Add in the lemon juice and lemonade mix and mix well.
  7. Add in the powdered sugar a half cup at a time until the frosting is the desired consistency.
  8. Cut out a small piece of the cupcake out of the top. Add a tablespoon of lemonade frosting in the middle of the cupcake and replace the top of the cupcake.
  9. Frost each cupcake with the lemonade frosting. Top with a lemon wedge.
