Tea Sandwiches for a Tea Party!

A trio of delicious and easy to make tea sandwiches perfect for a luncheon or a tea party!
For the Hummus Chicken Salad Sandwiches:
  • 2 chicken breasts, cooked and shredded
  • ¾ c. lemon hummus
  • 2 T. celery, chopped
  • 2 garlic cloves, minced
  • 1 t. black pepper
  • ½ t. salt
  • 1 t. paprkia
  • 8 rolls, sliced in half
  • 8 lettuce leaves
For the Vegetarian Cheddar Chive Scone Sandwiches:
  • 1 shallot, thinly sliced
  • 3 ounces Londoner Farmhouse Cheddar cheese, thinly sliced
  • 1 c. watercress leaves
  • 6 cheddar chive scones (see recipe below)
For the Ham, Apple, and Cheese Tea Sandwiches:
  • 6 slices white bread
  • 3 oz. maple ham, thinly sliced
  • 1 apple, thinly sliced
  • 3 oz. Londoner Red Leicester, thinly sliced
  1. In a large bowl combine the shredded chicken breasts, lemon hummus, celery, garlic, pepper, salt, and paprika. Mix well and refrigerate for at least 2 hours before serving.
  2. When ready to serve place a lettuce leaf on a roll and then top with ¼ cup of the chicken mixture.
  3. To make the vegetarian scone sandwiches simply cut the scones in half then layer with the shallot, Farmhouse Cheddar cheese, and watercress leaves. Serve immediately.
  4. To make the ham, apple, and cheese tea sandwiches lay out 3 slices of white bread. Top each slice with 5-6 apples slices, 1 ounce of ham, then 1 ounce of cheese. Top with another slice of bread. Cut each sandwich into 4 squares and arrange on a plate.
