Cheddar Chive Scones

Delicate scones are filled with Londoner Cheddar cheese and fresh chives. Perfect for a tea sandwich or for serving with butter.
  • 1⅓ c. flour
  • 2 t. baking powder
  • 1 t. salt
  • 6 T. cold Kerrygold Salted Butter, cut into pieces
  • ½ c. coarsely shredded Londoner Cheddar cheese
  • ¾ c. milk
  • 2 T. chives, chopped
  1. Preheat the oven to 425 degrees.
  2. In a large bowl combine the flour, baking powder, and salt. Mix well.
  3. Add in the butter and mix with your hands until the mixture resembles wet sand.
  4. Stir in the cheese, milk, and chives. Mix well until a dough forms.
  5. Gather the dough into a ball and knead several times.
  6. Divide the dough into 10 or 12 pieces and roll into balls.
  7. Place on a greased cookie sheet and flatten slightly.
  8. Bake for 13-16 minutes or until golden brown. Remove from oven and allow to cool for 3 minutes before removing from pan and cooling on a wire rack.
