Slow Cooker Pulled Pork with Mustard Barbecue Sauce #SundaySupper

A tasty mustard based pulled pork made in the slow cooker for an easy dinner.
  • 3-4 lb. boneless pork loin or roast
  • 1 t. salt
  • 1 t. pepper
  • 2 T. butter, melted
  • ½ onion, minced
  • 5 garlic cloves, minced
  • 1 c. yellow mustard
  • 1 T. dry mustard
  • ¾ c. cider vinegar
  • ½ c. brown sugar
  • ½ c. water
  • 1 T. hot sauce
  • 10 Kaiser rolls or other hearty buns
  1. Sprinkle the pork loin or roast with salt and pepper and place it in the slow cooker.
  2. Arrange the onions and garlic around the pork in the slow cooker.
  3. In a medium bowl combine the yellow mustard, dry mustard, cider vinegar, brown sugar, water, and hot sauce. Mix well and pour over top of the pork.
  4. Cook the pork on low for 6 hours, adding water halfway through if needed.
  5. After 6 hours use two forks and shred the pork. Mix well with the barbecue sauce in the slow cooker.
  6. Place the pork on the rolls and serve warm.
