Gourmet Pita Pizzas with Figs and Prosciutto

Serves: 2 pita pizzas
Toufayan pitas make a crispy base for these gourmet pita pizzas topped with goat cheese, prosciutto, spinach, and fresh figs.
  • 2 Toufayan pitas (your favorite flavor)
  • 1 T. olive oil
  • salt and pepper
  • ¼ c. cheese (use either goat cheese or blue cheese)
  • ¼ c. fresh spinach, chopped
  • 2-3 slices of prosciutto, chopped
  • 2 figs, thinly sliced
  • balsamic vinegar
  1. Preheat the oven to 400 degrees.
  2. Brush one side of the pitas with olive oil. Sprinkle with salt and pepper.
  3. Spray a cookie sheet and place the pitas, oil side up, on the pan. Bake for 5 minutes.
  4. Remove from the oven and divide the cheese between the two pitas. Sprinkle with spinach and top with prosciutto.
  5. Bake for 10 minutes or until the prosciutto looks crisp and the pitas are golden brown.
  6. Quickly top the pita pizzas with sliced fresh figs and drizzle with balsamic vinegar.
  7. Cut each pita into 4 pieces and serve hot.
