Chili with Quinoa

A delicious and hearty chili thickened with quinoa.
  • 1 lb. ground beef
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 2 cans (14.5 oz) diced tomatoes
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 T. chili powder
  • 1 T. cumin
  • 1 t. black pepper
  • 2 c. beef broth
  • 3 c. water
  • 1 c. quinoa
  1. In a large Dutch oven heat the beef over medium heat for 5-7 minutes or until it has browned.
  2. Add in the black beans, kidney beans, bell pepper, onion, and garlic cloves. Cook for 3-4 minutes or until fragrant.
  3. Add in the chili powder, cumin, and black pepper. Stir into the mixture and cook for 2 minutes.
  4. Add in the beef broth and water and stir. Bring to a boil then reduce to a simmer. Simmer for 20 minutes.
  5. Stir in the quinoa and simmer for 20 minutes, stirring occasionally.
  6. Serve hot.
