Thai Chicken over Rice

Make Thai at home with this sweet and spicy sauce tossed with chicken, broccoli, and peppers served over jasmine rice.
  • 1 lb. chicken breasts, cut into 1 inch pieces
  • 1 T. olive oil
  • 1 c. broccoli florets
  • 1 bell pepper, chopped
  • 3 garlic cloves, minced
  • ⅓ c. soy sauce
  • 1 T. brown sugar
  • 1 T. Sriracha
  • 1 T. ginger, minced
  • 3 T. green onions, chopped
  • 2 c. jasmine rice, cooked
  1. In a large skillet heat the olive oil over medium heat. Add the chicken and saute for 10 minutes or until cooked through.
  2. Add the broccoli, bell pepper, and garlic cloves. Stir fry for 5 minutes.
  3. Mix together the soy sauce, brown sugar, Sriracha, and ginger. Pour over top of the chicken and vegetables and cook for 2-3 minutes.
  4. Sprinkle the green onions over top and serve with ½ cup of jasmine rice.
