White Chocolate Peppermint Cupcakes with Hot Chocolate Frosting

A moist and delicious white chocolate peppermint cupcake topped with Hot Chocolate Frosting!
For the Cupcakes:
  • 1 box Pillsbury™ Funfetti® Holiday Cake Mix
  • 1 c. Great Value 1% milk
  • ½ c. vegetable oil
  • 3 eggs
  • ⅓ c. M&M's® White Peppermint , chopped
  • ¼ c. crushed peppermints
For the Frosting:
  • 2 sticks butter, softened
  • ¼ c. hot chocolate
  • 4 c. powdered sugar
For decoration:
  • 1 c. M&M's® Hot Chocolate
  • Powdered Sugar
  1. Preheat the oven to 350 degrees. Line 2 muffin tins with 24 cupcake liners. Set aside.
  2. In a large bowl combine the cake mix, milk, oil, and eggs. Mix well for 2 minutes or until well combined.
  3. Fold in the M&M's® White Peppermint and crushed peppermints.
  4. Pour the batter into the prepared muffin tins, filled ⅔ of the way full.
  5. Bake for 20-23 minutes or until a toothpick inserted into the center comes out clean. Remove and cool on wire racks.
  6. To make the frosting place the butter in a large bowl and beat with a hand mixer until smooth. Add in the hot chocolate and beat until smooth.
  7. Add the powdered sugar, ½ cup at a time, until desired consistency is reached. Pipe the frosting onto the cooled cupcakes.
  8. Decorate each cupcake using M&M's® Hot Chocolate. Then sprinkle the tops of the cupcakes with powdered sugar.
