Winter Salad with Citrus Vinaigrette

Mixed greens with dried cherries, candied pecans, and a fresh squeezed citrus vinaigrette.
For the salad:
  • 6 c. mixed greens
  • ½ c. dried cherries
  • ½ red onion, thinly sliced
  • 1 pear, thinly sliced
  • ½ c. candied pecans
  • ¾ c. Pepper Jack cheese, shredded
For the dressing:
  • 3 T. fresh squeezed orange juice
  • ¼ c. red wine vinegar
  • ¼ c. olive oil
  • 1 t. black pepper
  • 1 t. salt
  • 2 garlic cloves, minced
  • 1 t. Dijon mustard
  1. To make the salad put the mixed greens in a large bowl.
  2. Top the salad with the dried cherries, red onions, pear, candied pecans, and Pepper Jack Cheese. Set aside.
  3. To make the dressing combine all of the ingredients in a bowl with a tight lid. Shake vigorously for 30 seconds.
  4. Serve the salad with the dressing on the side.
