Cauliflower with Pumpkin Seeds, Brown Butter, and Lime

Let your cauliflower be the star of dinner when it's paired with crispy pumpkin seeds, brown butter, and zesty lime juice.
  • 2 T. olive oil
  • 1 head cauliflower, cut into florets
  • 1 t. salt
  • 1 t. black pepper
  • 2 T. salt butter
  • ¼ c. pepitas (shelled pumpkin seeds)
  • 2 garlic cloves, minced
  • ½ t. red pepper flakes
  • 1 T. lime juice
  • ¼ c. cilantro, chopped
  1. Preheat the oven to 450 degrees. Pour 1 tablespoon olive oil on a baking dish. Place the cauliflower florets on the baking dish. Drizzle with the remaining olive oil and sprinkle with salt and pepper. Bake for 20-25 minutes, turning the cauliflower halfway through baking.
  2. Meanwhile, melt the butter in a small skillet over medium heat. Add in the pumpkin seeds and cook, swirling pan occasionally, until the butter is browned. This will take 6-8 minutes.
  3. Remove from heat and add the garlic, red pepper flakes, and lime juice and stir.
  4. Arrange the cauliflower on a platter and drizzle with the brown butter and pumpkin seeds. Sprinkle with cilantro.
