Winter Salad with Blood Orange Vinaigrette

A delicious combination of greens, cheese, walnuts, blood oranges, and vegetables served with a tangy Blood Orange Vinaigrette.
For the dressing:
  • Juice of 2 blood oranges
  • ¼ c. olive oil
  • ⅓ c. red wine vinegar
  • 3 garlic cloves, minced
  • 1 t. Dijon mustard
  • 2 t. honey
  • salt and pepper
For the winter salad:
  • 4 c. mixed greens
  • 2 c. baby spinach
  • 2 blood oranges, divided into segments then cut in half
  • 1 carrot, cut into matchsticks
  • ½ red onion, thinly sliced
  • ¼ c. walnuts, chopped
  • ⅓ c. mozzarella cheese, shredded
  1. Combine all of the ingredients for the dressing in a container with an air tight lid. I like using a mason jar. Put the lid on a shake vigorously for 1-2 minutes or until combined. Refrigerate until ready to serve.
  2. In a large serving bowl combine the mixed greens and baby spinach and toss to combine.
  3. Place the orange segments on top of the greens. Add the carrots and onions then sprinkle with the walnuts.
  4. Lightly sprinkle the mozzarella cheese on top.
  5. Serve with the blood orange vinaigrette on the side.
