Baked Blueberry Oatmeal #BrunchWeek

- 3 c. oats
- 2 t. baking powder
- 1 t. sea salt
- 1 t. cinnamon
- ½ t. ginger
- ¼ c. Dixie Crystals brown sugar
- 2 eggs
- 1 t. orange zest
- 1 t. Nielsen-Massey orange extract
- 1½ c. milk
- 1 c. blueberries
- ½ c. walnuts, chopped
- ⅓ c. flax seeds
- 2 T. honey
- 1 T. Dixie Crystals brown sugar
- 1 T. vegetable oil
- Preheat the oven to 375 degrees. Spray a 9 x 13 baking dish with cooking spray.
- In a large bowl combine the oats, baking powder, sea salt, cinnamon, ginger, and brown sugar.
- In a medium bowl beat the eggs. Add in the orange zest, orange extract, and milk.
- Fold in the blueberries.
- Pour the liquid ingredients into the bowl with the dry ingredients and mix well. Pour the oatmeal into the prepared baking dish.
- In a small bowl combine all the ingredients for the topping. Mix well and sprinkle over top of the oatmeal.
- Bake for 25-30 minutes or until golden brown.
- Remove from oven and cut into 8 large rectangles.
