Crustless Kielbasa, Pepper, and Asparagus Quiche

Enjoy a delicious quiche filled with kielbasa, peppers, and asparagus along with spicy Pepper Jack cheese.
  • 8 oz. kielbasa, chopped
  • ½ green pepper, chopped
  • ½ orange pepper, chopped
  • ½ onion, chopped
  • 1 c. asparagus, cut into 1 inch pieces
  • 3 garlic cloves, minced
  • 2 eggs
  • ½ c. egg whites (I used Eggland's Best)
  • 1 t. thyme
  • salt and pepper
  • 1 c. Cabot Pepper Jack cheese, shredded
  • 1 c. milk
  1. Preheat the oven to 400 degrees. Spray a 9 inch cake pan or 8 x 8 baking dish with cooking spray and set aside.
  2. Place the kielbasa in a medium skillet and cook over medium high heat for 5-7 minutes or until browned. Remove from heat and cool.
  3. Place the peppers, onion, and asparagus in a medium skillet along with 1 teaspoon olive oil. Saute over medium heat for 5 minutes. Allow to cool for 5 minutes.
  4. Pour the kielbasa and vegetables into a large bowl. Add in the garlic cloves.
  5. Add the eggs and egg whites to the bowl and mix until well combined. Add in the thyme, salt, and pepper.
  6. Stir in ¾ cup cheese and all of the milk. Mix well.
  7. Pour the mixture into the prepared pan. Sprinkle with remaining cheese.
  8. Bake for 35-40 minutes or until the top is brown and the center is firm.
  9. Remove from oven and cool for 5 minutes before cutting and serving.
