Pork Tacos with Jalapeno Salsa

Serves: 10 small tacos
Make a delicious pork taco with a fresh pineapple and jalapeno salsa topped with cheese and sour cream.
For the pork:
  • 1 T. olive oil
  • 1 shallot, minced
  • 3 garlic cloves, minced
  • 1 jalapeno, seeded and diced
  • 2 t. soy sauce
  • 1 lb. pork tenderloin, cut in half lengthwise and thinly sliced
  • 1 T. brown sugar
  • 2 T. water
For the Salsa:
  • 1 c. fresh pineapple, chopped
  • ½ c. cucumber, chopped
  • ½ c. cilantro, chopped
  • ½ c. red onion, minced
  • 2 jalapenos, seeded and minced
  • 2 t. lime juice
  • salt and pepper
To put the tacos together:
  • 10 small flour tortillas
  • 1 c. cheddar cheese, shredded
  • ½ c. sour cream
  1. Heat the olive oil in a large skillet over medium heat. Add in the shallot, garlic, jalapeno, and soy sauce and cook for 3-4 minutes.
  2. Add in the thinly sliced pork, brown sugar, and water and cook for 6-7 minutes or until the pork is cooked through. Remove from heat.
  3. In a medium bowl combine all the ingredients for the jalapeno salsa. Toss to combine.
  4. To make the tacos place some of the pork mixture on a tortilla, sprinkle with cheese, add 1-2 tablespoons of jalapeno salsa, then top with sour cream.
