Strawberry Shortcake Waffles with Cinnamon Whipped Cream

Try a crisp vanilla waffle topped with fresh strawberry and a cinnamon flavored whipped cream.
For the waffles:
  • 2 eggs
  • 1½ c. milk
  • 1 t. vanilla
  • 1 T. baking powder
  • 3 T. sugar
  • 1 t. salt
  • ½ t. cinnamon
  • 1¾ c. flour
  • ¼ c. vegetable oil
For the topping:
  • ¾ c. strawberries, sliced
  • ½ c. heavy whipping cream
  • 2 t. cinnamon
  • 2 T. sugar
  • ¼ c. syrup
  1. In a large bowl whisk together the eggs, milk, and vanilla. Whisk until combined.
  2. In a medium bowl combine the baking powder, sugar, salt, cinnamon, and flour.
  3. Add the flour mixture to the egg mixture and whisk until mostly smooth. Whisk in the vegetable oil.
  4. Heat a waffle iron. Pour ½ cup of batter into the waffle iron and close it. Cook for 3-4 minutes or until the indicator light turns off to signal the waffle is finished.
  5. Repeat for remaining 3 waffles.
  6. To make the fresh cinnamon whipped cream pour the heavy whipping cream into a chilled metal bowl. Using a mixer on medium high speed mix until the cream begins thickening. Add the cinnamon and sugar and continue mixing until thick.
  7. Break the waffles into 4 pieces. Place 2 or 3 waffle quarter on a plate and layer with strawberries, syrup, and fresh cinnamon whipped cream. Enjoy hot.
