Salted Caramel and Chocolate Bars

Enjoy a layer of oat sugar cookies topped off with salted caramel and chocolate then finished with more oat sugar cookie for the ultimate Salted Caramel and Chocolate Bars.
  • 2 sticks butter, softened
  • ½ c. sugar
  • ½ c. brown sugar
  • ½ c. powdered sugar
  • 1 t. vanilla
  • 1¾ c. flour
  • ½ c. oats
  • ¾ c. caramel sauce
  • 1-2 t. sea salt
  • ½ c. chocolate chips
  1. Preheat the oven to 350 degrees.
  2. Line an 8 x 8 baking dish with foil, enough that it hangs over the edges so you can pull it out of the pan.
  3. In a large bowl combine the butter, sugar, brown sugar, powdered sugar, and vanilla. Mix well until combined.
  4. In a small bowl combine the flour and oats.
  5. Add the flour mixture to the butter mixture and mix until a dough is formed.
  6. Press half of the dough into the bottom of the prepared pan. Bake for 13 minutes.
  7. Remove from oven and pour the caramel mixture over top of the cookie crust. Sprinkle with as much sea salt as desired and then top with the chocolate chips.
  8. Crumble the remaining dough over top of the caramel mixture. You won't cover the entire top but it should cover a good portion of it.
  9. Bake for 20-25 minutes or until the top is browned and the caramel is bubbling.
  10. Cool on a wire rack for 1 hour.
  11. Place in the freezer for 30 minutes. Remove from the freezer then use the foil to remove the bars from the pan. Cut into 12 squares.
