Crostini with Peas, Brie, and Honey

Serves: 16 crostini
Enjoy a crunchy crostini topped with gooey Brie, fresh peas, crunchy almonds, and drizzled with honey.
  • 1 French baguette
  • 8 oz. Brie cheese, in ¼ inch thick slices
  • 1 c. fresh peas, sliced diagonally
  • ⅓ c. almond slices
  • ¼ c. honey
  • 1 T. sea salt
  • 1 T. black pepper
  1. Preheat the oven to 400 degrees. Spray 2 baking sheets with cooking spray.
  2. Slice the baguette on a diagonal into 1 inch thick slices (about 16 pieces) and place them on the baking sheets.
  3. Top each baguette with 2 slices of the Brie cheese. Bake for 6-8 minutes or until the brie is melted and bubbling.
  4. Remove from the oven and top with 1-2 tablespoons of the sliced peas and then sprinkle with 1 tablespoon of almonds.
  5. Drizzle the honey over top of the baguettes and then sprinkle with sea salt and pepper.
  6. Bake for 2 minutes and remove from oven. Serve hot.
  7. **For a twist drizzle a bit of balsamic vinegar over top of the crostini**
