Spinach Artichoke Tortellini with Creamy Lemon Sauce

Enjoy a quick and easy tortellini dish topped with a light lemon cream sauce and spinach, artichokes, and asparagus.
  • 1 package (9 oz) cheese tortellini
  • 1 T. olive oil
  • 2 garlic cloves, minced
  • 2 shallots, chopped
  • 1 bunch asparagus (1 lb), cut into 1 inch pieces
  • 6 oz. reduced fat cream cheese cut into chunks
  • 2 T. lemon juice
  • 1 t. salt
  • 1 t. black pepper
  • ½ t. nutmeg
  • 1 can (14 oz) quarter artichokes, drained
  • 2 c. baby spinach, stems removed
  • Grated Parmesan
  1. Cook the tortellini according to the package directions, reserving 1 cup pasta water.
  2. Heat the oil in a pan over medium high heat. Add the garlic and cook 1 minute. Add the shallots and cook for 3 minutes.
  3. Add the asparagus and cook for until it begins to softened, about 3-4 minutes.
  4. Stir in the cream cheese and cook until just melted. Add in reserved pasta water, lemon juice, and salt. Stir to combine.
  5. Turn the heat down to medium-low and add in the artichokes and tortellini. Cook until heated through. Add in spinach and cook for 1-2 minutes or until it starts to wilt.
  6. Serve hot with Parmesan cheese.
